can unsweetened coconut milk

red curry paste
Salt, soy sauce, or miso to taste
Rice for serving
Optional toppings: cilantro leaves, lime wedges, roasted peanuts, sliced green onions
Instructions
Heat oil in large skillet on high temperature.
Add edamame and mixed vegetables. Stir fry until cooked.
Stir in coconut milk, curry paste, and salt of choice; heat through.
Serve over rice.
Enjoy with your favorite garnishes!
