Chicken Salad with Greek Yogurt

Ingredients 

  • 1 cup plain Greek yogurt
  • 1/4 tsp black pepper
  • 1 tsp 1 teaspoon salt
  • 1 tsp 1 teaspoon dill, dried
  • 1 tsp cilantro dried
  • 1 tsp garlic fresh and minced
  • 1/4 tsp onion powder
  • 1 tsp parsley dried
  • 2 stalks celery chopped
  • 1/4 cup red onion diced
  • 3/4 cup Granny Smith apple diced
  • 1 cup chicken fully cooked, chopped
  • 1/2 cup sharp cheddar shredded
  • Serve on sandwiches or as a dip with veggies or chips

Instructions

  • In a medium bowl, combine yogurt, pepper, salt, dill, cilantro, garlic, onion powder, and parsley. Stir well.
  • Add celery, red onion, apple, chicken, and cheese. Stir to combine.
  • Cover tightly and refrigerate for at least one hour. This will allow the flavors to come together.
  • Serve on sandwiches or as a refreshingly, delicious dip for fresh veggies or chips. (Use gluten free bread or chips if following a GF diet.)
