Place pork, potato, onions, and bell pepper into the slow cooker.
In a small bowl, combine garlic, ginger, tomato paste, water, and curry powder. Stir to combine and then pour into the slow cooker.
Cook on high for 3 - 4 hours or cook on low for 4 - 5 hours until potatoes are fork tender.
Pour coconut milk into the slow cooker and stir to coat.
Prepare rice.
