This chicken is fantastic…I adore BBQ chicken in the slow cooker. The way that I sliced the potatoes and added them to the slow cooker freezer packs and then slipped them into the slow cooker…they came out almost like ‘scalloped BBQ potatoes’…haha! A little shredded sharp cheddar cheese on top would be delicious!
I served this with some fruit I had already cut up and broccoli from the freezer!
Slow Cooker BBQ Chicken & Potatoes
Freezer friendly and super easy!
Servings - 4 servings
Ingredients
- 1 chicken breast 2-3 chicken thighs
- 1 pepper diced
- ½ onion
- 3 potatoes sliced
- BBQ sauce
Instructions
- Assembly Instructions: Add all ingredients to the pack, in the order they were listed. Remove as much air as you can or vacuum seal the pack. Freeze up to 6 months in a refrigerator freezer, or 12 months in a deep freezer.
- Cooking Instructions: Thaw the slow cooker pack in the refrigerator overnight, or in a bowl of warm water for about 30 minutes. If the pack is partially thawed, cook on low for 8-10 hours. If the pack is completely thawed, you can cook on high for 6 hours or low for 8 hours.
- Side dish suggestion: A simple green salad, some broccoli or a chunk of warm bread. Omit bread if GF, or use GF bread.
