Pico Guacamole

I think I can say with 99% confidence that I have some kind of avocado every day. Sometimes it’s on a salad, sometimes I just add some lemon juice and scoop it right out of the skin, and sometimes I inhale an entire bowl of guacamole! (For real.)

I don’t know what it is about avocados, but we get along really well! đŸ˜‰

Recently, I made up a simple homemade guacamole and tossed in some pico de gallo to transform it into a filling, chunky guacamole. I like simplicity in meals and recipes, and this one is as simple as it gets.

Pico Guacamole

So fast and easy!!

Servings - 12 servings

Ingredients 

  • 4 ripe avocados
  • 1 lime, juiced
  • Salt to taste
  • 1 cup pico de gallo (depending on how chunky you want it)
  • Tortilla chips

Instructions

  • Open the avocados and remove the flesh and add to bowl. Mash with a fork or other mashing gadget. Add the juice from 1 lime (about 1 Tbsp) and then add a pinch of salt, one at a time, to taste.
  • Once the "base" of the avocado-lime-salt is ready, mix in the prepared pico de gallo.
  • Serve Pico Guacamole with tortilla chips, or your favorite "dipping" chip.

(And it seems I’ve passed along my daily avocado consumption to my oldest son! He LOVES guacamole!)
