    Pantry Challenge – Lunches

    For me, lunchtime on a pantry challenge has been the most challenging.  But I managed to come up with a delicious and simple salad, using up the $.69 bag of lettuce I bought last week!

    • Canned mandarin oranges
    • Slivered Almonds
    • Italian dressing

    There you have it…a simple, delicious and nutritious lunch from the pantry!

    Other lunches we have enjoyed using up pantry “stuff”…tuna fish sandwiches, ham sandwiches (frozen and leftover from the holidays), PBJ Rollups (tortillas from freezer), fresh fruit and Banana Smoothies (using fresh fruit I froze)!

      Here’s a great lunch made from pantry ingredients. It’s called Mock Tuna Salad on recipezaar.com, but it’s a chickpea salad spread. Sounds weird, but is very good!
      Mash a drained can of chickpeas. Mix with 2 Tbsp light or regular mayo, 2 tsp mustard, 1Tbsp sweet pickle relish, 2 sliced scallions, 1 Tbsp finely minced onion, salt and pepper to taste. Easy!
