    Menu Plan Monday

    So…it’s gonna be another Pantry Challenge Week for me this next week!  Partly because I only have a few meals to make, as we have family coming into town later in the week…and partly because we still have lots leftover from the weekend!  I’ll plan to make a smaller trip to the grocery store later in the week for next week.  I’ve changed my grocery shopping “day” to Friday/Saturday, shopping for the weekend and following week…and like it so far!  I’ve mostly shopped on Monday or Tuesday, but it didn’t seem to “mesh” with my meal planning schedule…so we’re trying this out for a bit!

    Breakfasts
    Almond, Raspberry and Blueberry Muffins
    Cereal with Rice Milk, Banana
    Frozen Pancakes with Fresh Strawberry/Honey Syrup
    Rice Krispies with Honey, Watermelon
    Scrambled Eggs, Watermelon
    Cream of Rice with Blueberries and Honey
    Pancakes with Fresh Strawberry/Honey Syrup

    Lunches
    Leftover Pork Chops and Salad, Fruit Smoothie
    PB Roll Ups, Watermelon
    Spaghetti
    Hummus, Crackers, Watermelon and Sweet Potatoes
    Leftovers
    Out for Lunch
    Out for Lunch

    Monday – Grilled Salmon, Squash from the Garden, Rice with Garden Greens

    Tuesday – Chicken Tetrazinni, Corn on the Cob

    Wednesday – Crockpot Black Beans and Rice, Corn on the Cob

    Thursday – Pumpkin Chocolate Chip Waffles (x2 to have a batch in the freezer), Watermelon

    Friday – Family in Town

    Saturday – Family in Town

    Sunday – Grill Steak and/or Shrimp

    To Make/Bake: Fruit Salad, Zucchini Pineapple Bread

    I will post the recipes each night after I make the meal. If you see a meal you are interested in, please check back for the recipe later in the week!

      Hi Erin!
      We grocery shop on Saturday or Sunday. It works out great because I have Martin’s help and it is much easier from a meal planning perspective. I hope it continues to work out for you guys too 🙂

      Oh, I hate shopping on Friday or Saturday. I find that Thursday is best. The produce is the freshest, the lines aren’t as bad, and the sales have just started. I plan my menus on Wed. when I get the sale papers.

      Loss leader shopping is the way to go!

      Erin,
      Found a cookbook I’m exited about. “Fix, Freeze, Feast” It’s geared for clubhouse shoppers but easily adapts for stockpilers. It has quadruple meal size recipes that freeze well. Book includes reheat directions. It also has a recipe for homemade refried beans.

      I’m hoping to put some meals up for when farmhand #3 arrives.

      Hi! I’m from Colombia, and I just found this web page through our local newspaper. I am really excited about it and very impressed with all the tips and recipes I found in your page. Unfortunatelly there are some things we dont find in Colombia like raspberries and blueberries, but I will try to use instead other ingredients. Congratulations and I hope to find more interesenting recipes!
