    Menu Plan Monday

    Monday– Mexican Chicken Skillet Dinner (Using leftover chicken from ;ast week’s whole chicken meal)

    Tuesday – Tilapia on Corn Salsa

    Wednesday – Crockpot Honey Mustard Chicken

    Thursday – Pork Fried Rice

    Friday – Lasagna Soup

    Saturday – Honey Mustard Chicken Salad Sandwiches (Use leftovers from Wednesday)

    Sunday – Easter Meal

    I will post the recipes each night after I make the meal. If you see a meal you are interested in, please check back for the recipe later in the week!

      Everything on your menu looks delicious! Can you share the recipe for lasagna soup? And I’ve never thought to make honey mustard chicken salad ! That sounds great!

      I was wondering what your plans were for Easter dinner. Do you stick to your $5 limit, or do you relax it for the holiday?

        LOL! No $5 limit for holidays! Did Thanksgiving for 6 for $35 and did not cook for Christmas. We are going to my MIL’s for Easter 🙂

      Hi–I love your blog, wanted to let you know of a great $5 lasagna recipe:
      2 cans or jars spaghetti sauce
      6 no boil lasagna noodles
      3 c. mozzarella cheese
      2 c. cottage cheese
      1/2 c. parmesan cheese
      2 eggs
      salt, pepper to taste
      1 box frozen chopped spinach (thawed and drained well)
      Mix together cottage and parmesan cheeses, eggs, salt & pepper, and spinach. Pour a bit of sauce at bottom of pan, layer 3 noodles, half of cottage cheese mixture, half of mozzarella cheese, and a layer of sauce. Repeat. Bake covered with foil at 350 1 hr. 15 min. Let stand 10 minutes.

      This is really good even if you don’t “like” spinach.
