Week 3 of our Pantry Challenge Month went pretty smoothly…partly because I was out of town and we had 2 meals “out” with friends. One evening my husband and the boys met up with our church group and brought salad and tortilla chips, and the other night they hung out with friends for a birthday celebration and they graciously grilled for us! Also, I was out of town at a conference in Salt Lake City…so I wasn’t home for a few days.
I went to the store twice this past week, once to pick up some produce on Monday morning. And again before I left so my husband would have what he needed for our community group meeting. Before I left, we enjoyed 3 slow cooker meals from the Costco meal plans.
For breakfast, we ate a bunch of berries and oatmeal (because of this video and having a ton of oatmeal packets to eat up!). I also made a batch of Cinnamon Roll Baked Oatmeal for the boys before I left on the trip, for them to enjoy as an afternoon snack!

A bit more than the $30 I was hoping for, but I’ll blame that on the salad kits. I wanted to keep it super simple for my husband to bring and assemble the salad for everyone. 🙂

Last Week I Baked/Made:
- 1 batch of Cinnamon Roll Baked Oatmeal (see above on how to get a sneak peek of the recipe)
- 1 loaf of Banana Bread
- 1 batch of muffins
What I Need from the Store This Week:
- Fresh produce – more bananas, sweet potatoes, apples, salad mix, berries, peppers and whatever else is on sale 🙂
- Turkey & yogurt for lunch boxes
What I Still Have to Use this Week/Month:
- Still have several meals in the freezer from the recent Costco plans
- Sweet potatoes
- Homemade Pizza Crust in the freezer
- Lots of dried beans and canned goods
What Will We Eat This Week:
Lunch – I will bake some snacks for the kids’ lunch boxes and they will get some fruit, turkey & chips too. I will be having soup for lunch. Steve usually takes a sandwich or soup with some fruit or leftover veggies. We will keep it very simple again this week! (Although, I’m looking forward to bringing a little more variety back into our lunches when this pantry challenge is up!)
Breakfast – Still out of cold cereal. We have lots of oatmeal to use up, so I’ll be making several batches of oatmeal. And to mix it up, I’ll make some rice to use to make rice pudding too. I’ll sneak some bacon or sausage in when I have time!
So there you have it…the recap from week 3 and the plan for week 4! Breakfasts and lunches will continue to be ‘boring’ and simple, while dinners continue with their regular flair…thanks to all the freezer meals we have!
