Copycat Chipotle Paleo Chicken “Burrito Bowl”

When I was doing my Whole30 challenge this past holiday season, the only ‘fast food’ that I allowed myself to eat one evening was Chipotle and this is what I ordered…

Bowl with lettuce. A little vinaigrette.

Chicken.

Peppers and onions.

Guac.

And that’s all I needed. It probably wasn’t ‘perfect’ as far as ingredient standards for Whole30 go, but it was close enough for me! No grains, no soy, no corn, no dairy. That’ll work.

And that’s what this recipe has for you too…none of those ingredients. (Double check the oil in your vinaigrette! Or make your own!)

{View the recently leaked Chipotle Guacamole recipe on their site. I’ve included my version below…just trying to keep it simple and mild for the kids. I left out the red onion and peppers. 🙂 }

Copycat Chipotle Paleo Chicken "Burrito Bowl"

Perfectly fresh chicken dish!

Servings - 4 servings

Ingredients 

  • 1 small head Romaine lettuce, shredded
  • Vinaigrette dressing
  • 2 Tbsp olive oil
  • 1 green bell pepper seeded and sliced
  • 1 orange bell pepper seeded and sliced
  • 1 small white onion, sliced
  • 2 large boneless skinless chicken breasts, sliced
  • 1 Tbsp homemade taco seasoning
  • 2 ripe avocados seeded and mashed
  • 2 tsp lime or lemon juice
  • 4 stems cilantro finely chopped
  • 1/2 tsp salt

Instructions

  • Set up your 'bowls' by adding shredded lettuce and a few drizzles of vinaigrette dressing.
  • Heat the olive oil in a skillet and add the bell pepper slices and onion slices to the skillet and saute over high heat for 4 to 6 minutes, stirring often. Once the onions have turned opaque and bell peppers have browned and softened, remove from the heat.
  • To the same skillet, add the sliced chicken and add the taco seasoning and saute the chicken for 5 to 7 minutes, or until cooked through. Once the chicken has cooked, add the peppers and onions back in with the chicken and keep warm over low heat until ready to serve.
  • In a small bowl, mash the avocados with the lemon or lime juice, cilantro and salt. (Add the red onion and jalapenos, if desired.)
  • Add the chicken and bell peppers and onions over the shredded lettuce and top with spoonful of homemade guacamole.
  • Serve Chipotle Paleo Chicken "Burrito Bowl."
