I just love breakfast for dinner!  Maybe because it breaks up the meal planning monotony I sometimes feel…or because it seems to be quicker and easier to prepare!

Tonight we had Tricia’s (Once A Month Mom) Ham and Hashbrown Bake…(original recipe from Shannon at Rocks in My Dryer).  Remember our trade.

    Hello, delicious!

The boys ate earlier than we did.  It sorta happened by accident.  But I liked it!  We let them go from the table after they had finished eating…since they started before we did.  We did eat part of the meal together (’cause that is important!), but it really was nice to just sit with the Hubs and talk…while the kids played in the playroom.  Like a mini 10-minute dinner date!

The boys ate scrambled eggs, toast and fruit salad (this week’s version consists of watermelon, cantaloupe, pineapple and peaches).  We also had some scrambled eggs, fruit salad and the Ham and Hashbrown Bake.

I encourage people to add 1 “breakfast for dinner” meal into their weekly meal plan to help reduce overall weekly meal costs!  Eggs seem to be cheap everywhere these days…so base your meal around the protein packed egg and you’re set!

I always love mixing up “breakfast” at dinner time! Who needs to live by the “rules” all the time, right?!

This is one of my go to faves. I can always count on a yummy, easy dinner when i fix either homemade pancakes or if we have homemade biscuits, eggs and bacon.

I love having breakfast for dinner. And it is affordable too. The routine around here is that when my husband is out of town we have pancakes for at least one dinner.

I LOVE breakfast for dinner! Of course ours is usually whole wheat blueberry pancakes. Unfortunately since my son was allergic to eggs until just recently, we still can’t get him to eat them. One day, hopefully, since I love to make quiches. But my 11 mo old loves scrambled eggs and had that last night with fruit too.

We love having breakfast for dinner! And I agree that everyone should plan at least one a week. It’s quick, easy, and everyone loves it! And it really helps us reduce over all food costs because we have our own eggs!

We do breakfast for dinner quite a bit. We also do dinner leftovers for a quick breakfast in the mornings. Nothing like a slice of meatloaf and mashed potatoes start your day!

We love to have a ‘Breakfast Supper’ fairly often (actually I think my oldest son would eat this every night if I let him). It is easy and fun! Who says breakfast has to be eaten at breakfast time?

This is funny as we had oatmeal pancakes with banana for dinner one night this week. Unusual for us but we have had a traveling flu virus here so I did not want to cook. My husband made the pancakes so they tasted great! I also like to make Egg Foo Yung. This is a great way to use up leftover meat and veggies with a base of eggs.

I have a little problem. I cannot make a meal that costs more than $5. It’s unnatural, but my pocketbook thanks me.
