While I would love to have orderly evenings with plenty of time to cook three course meals, it isn&#8217;t happening. <strong>So on busy nights I content myself with feeding my family &#8220;<em>Real</em> Fast Food&#8221; &#8211; meals that are made of real ingredients and that come together faster than the local pizza company can deliver pizza.</strong></p><p>If I make time on one day to Batch Grill or <a
href="http://premeditatedleftovers.com/batch-broiling-and-pasta-salad-recipe/" target="_blank">Batch Broil</a> some chicken, it allows me to put together a satisfying salad in a short amount of time. I also wash my greens as soon as I bring them in from the garden or home from the store, so I don&#8217;t have to waste precious minutes washing and drying veggies with four pair of starving eyes staring at me.</p><p>This recipe is great for repurposing leftover <a

If you only have curled spinach leaves you can flatten them out a bit by making small tears in the curves. But I don&#8217;t worry about laying them perfectly flat since they are on the bottom layer; all the other veggies and cheese will flatten them out.</p><p> <img

Sauteing the vegetables in advance helps them release some of the water. Since this recipe does not have pasta, you don&#8217;t have anything to absorb the excess fluids. For this reason, I also use a thick spaghetti sauce. If your favorite sauce is not thick, let it simmer while you prep the other ingredients to cook off some of the fluids.</p><p><a

class="recipe"><h1>Alea&#8217;s Vegetable Lasagna with Spinach &#8220;Noodles&#8221;</h1><p>Yield - 6 -8 servings</p><p>Preparation Time - 45 minutes</p><p>Cooking Time - 30 &#8211; 40 minutes</p><h2>Ingredients</h2><ul><li>2 tablespoons olive oil , divided</li><li>2 small zucchini, thinly sliced</li><li>1 medium yellow squash, thinly sliced</li><li>2 tablespoons fresh oregano, divided</li><li>2 tablespoons fresh basil, divided</li><li>pepper</li><li>1 cup broccoli, finely chopped</li><li>1 cup carrots, julienned</li><li>1 cup onion, chopped</li><li>1/2 cup chopped green bell pepper</li><li>1/2 cup celery, thinly sliced</li><li>6 cloves garlic, minced</li><li>1 (16 ounce) container small curd cottage cheese</li><li>1 cup Parmesan cheese, divided</li><li>3 tablespoons fresh parsley, shredded</li><li>4 cups spinach leaves, washed and thoroughly dried</li><li>3  cups shredded mozzarella cheese, divided</li><li>3 cups spaghetti sauce (I used this <a

When oil is hot add zucchini and yellow squash. Add 1 tablespoon of oregano, 1 tablespoon of basil,  and a dash pepper.  Sauté for 5 –7 minutes. Place zucchini and yellow squash on a dish, but do not rinse out the pan.</li><li>Reheat the remaining oil in the large skillet adding a little more if necessary. When oil is hot add broccoli, carrots, onions, bell peppers, and garlic. Add 1 tablespoon oregano, 1 tablespoon basil, and dash of pepper.  Sauté for 6 &#8211; 8 minutes; set aside.</li><li>Preheat the oven to 375 degrees and coat a 9 x 13 pan with a light coat of oil.</li><li>In a small bowl, combine cottage cheese, 1/2 cup of parmesan cheese and 2 tablespoons parsley.</li><li>Spread about 1 cup of spaghetti sauce in the bottom of the prepared pan. Layer spinach leaves, half of cottage cheese mixture, half of zucchini and squash, 1 cup of mozzarella cheese, half of the vegetables, and 1 cup of spaghetti sauce. Repeat layers. Top with  1 cup mozzarella cheese and 1/2 cup Parmesan cheese. Sprinkle 1 tablespoon of parsley over the top.</li><li>Bake at 375 degrees  for 30  minutes, or until lightly browned on top. href="http://www.5dollardinners.com/2011/01/calling-spinach-recipes.html" target="_blank">calling all spinach recipes</a>&#8221; last week, I remembered the meal that I made for them and wondered if I could pull it off for $5. I went digging&#8230;found a tomato in the fridge (that Steve must have bought last week when I was out of town&#8230;as I don&#8217;t recall buying one!) (I&#8217;ll have to ask him about that one&#8230;as he rarely goes to the grocery store!)</p><p>I came close!</p><h3>The How-To</h3><p><a

So the boys could enjoy this!)</p><p>(At the moment, Ryan, Charlie, Tyler and I are dairy free. And Tyler is soy free.)</p><p>Roll up the chicken, spoon any extra spinach tomato mixture around the stuffed chicken.</p><p>Bake.</p><p>Make tomato sauce for topping while baking. Spoon the tomato sauce over top.</p><p><a

class="recipe">Note: There is a print link embedded within this post, please visit this post to print it.<h1>Spinach and Tomato Stuffed Chicken Breasts</h1><h2>Ingredients</h2><ul><li>1 box frozen spinach ($.25)</li><li>1 Tbsp olive oil ($.10)</li><li>1 tomato, diced (or 1 15 oz can drained diced tomatoes) ($.25-$.75)</li><li>4 garlic cloves, crushed ($.20)</li><li>Sprinkles of dried basil, salt and pepper</li><li>3-4 chicken breasts, depending on size&#8230;about 1.3 lb. ($2.44)</li><li>About 1 cup shredded mozzarella cheese ($.75) <em>I used slices</em></li><li>1 6 oz can tomato paste ($.49)</li><li>About 1 tsp Italian seasonings ($.05)</li><li>Bread or dinner rolls with jam and butter ($.75)</li></ul><h2>Directions</h2><ul><li>Cook the spinach as directed on the package and drain well. And by well, I mean well.</li><li>In a large skillet, add the olive oil, well drained spinach, diced tomato and crushed garlic.  Add a few sprinkles of basil and salt and pepper. Saute for 5-7 minutes, or until fairly dry and liquid has steamed off.</li><li>Pound out the chicken breasts and place into a slightly greased baking dish. Spoon the spinach and tomato mixture into the chicken breasts.  Top with some shredded mozzarella cheese and roll up. Repeat for all the chicken breasts. Spoon any remaining spinach around the chicken in the baking dish.  Bake at 375 for 45-50 minutes, or until cooked through.</li><li>While the chicken is baking, make some red sauce with the tomato paste.  Spoon the tomato paste into a small saucepan and add 2.5 cans worth of water.  Whisk and add some Italian seasonings and let simmer over low heat until the chicken is finished baking. Spoon the sauce over the chicken pieves   (You could also use tomato sauce, crushed tomatoes or spaghetti sauce!)</li><li>Warm some dinner rolls or toast some bread.  Serve warm with jam and butter.</li><li>Serve Spinach and Tomato Stuffed Chicken Breasts with bread, jam and butter.</li></ul><h2>Cost $5.28</h2></blockquote></div></div><p><a

class="alignnone size-full wp-image-13721" title="frozen-spinach" src="http://www.5dollardinners.com/wp-content/uploads/2011/01/frozen-spinach.jpg" alt="frozen spinach Calling All Spinach Recipes..." width="311" height="467" /></a></p><p>Yeah.</p><p>So.</p><p>Um.</p><p>Well&#8230;..</p><p>It seems that I have more spinach on hand that I thought!</p><p>I went scavanging (is that a word?) for some chicken in the deep freezer this past weekend&#8230;and ended up doing a little reorganizing, while I was at it.</p><p>(Nevermind the frostbitten fingers.)</p><p>I discovered that I had several other boxes of frozen spinach hiding underneath the baskets that sit at the top of the freezer.  And while it&#8217;d be easy to serve it up as a quick and simple side dish&#8230;it&#8217;d be way more fun to do something else.  I recently made some tasty <a
href="http://www.5dollardinners.com/2010/10/spinach-meatballs-spaghetti.html" target="_blank">Spinach Meatballs</a>.  And I&#8217;ve got an Italian Wedding Soup on the menu for January. (Yes&#8230;we are halfway through the month and I haven&#8217;t published my meal plan for January. It&#8217;s coming. After rummaging through the freezer and pantry last week, I discovered that I had everything on hand for these Spinach Meatballs.  A reader mentioned them on Facebook recently, and I had to make them.</p><p>I was really worried that the boys wouldn&#8217;t eat the meatballs because they had &#8220;green stuff&#8221; in them, but it turned out to be useless worry. <strong> All 3 of the boys gobbled them up. </strong>Hopefully your little ones will too!</p><p>A two dish, one plate dinner for ya!</p><p><a

Washmore (yes, we have been home for 10 days and I still haven&#8217;t caught up on laundry from the Savvy Blogging Summit!), helping the boys with a new puzzle and reading their new book to them approximately 18 times, answering emails, making important behind-the-scenes decisions, picking up little pieces of fuzz from the floor that Tyler seems to be so attracted to these days, watering the garden, building tents and forts with sheets, chairs and couch cushions, send out a few tweets, maybe a facebook status update&#8230;</p><p>So I look up at the clock&#8230;5:25.</p><p><em>What?!?  How&#8217;d that happen?!</em></p><p>Thankfully, I had some <a
href="http://www.5dollardinners.com/2010/06/batch-grilling-chicken-breasts.html" target="_blank">diced grilled chicken in the freezer</a>, some cooked turkey bacon in the freezer, along with a box of frozen spinach.  And in the time that it took to cook the pasta, I had the chicken, bacon and spinach thawed, warmed and ready to toss with the pasta.  I even had a second to grab some fresh basil, oregano and thyme from the garden&#8230;just enough to give the additional <strong>umph</strong> to the pasta!</p><p>So what&#8217;s missing from this here florentine pasta&#8230;a cream sauce! I went for the lower cal (and easier) drizzle of olive oil. <img
