I found a jar of apricot preserves in my pantry.  And there’s not a better way to use it up than this!
I used the Apricot Chicken recipe from the Make it Fast, Cook it Slow Cookbook!

Baked Ziti

Ingredients
1 16 oz box Ziti, cooked ($1.25)
1/2 spaghetti squash, cut in half ($1.79)
4 T butter ($.25)
6 T flour ($.10)
2-3 cups milk ($.30)
S/P
1 cup mozz cheese, shredded ($.99)
1/2 cup lima beans ($.25) (for some color!)
