Grilled Marinara Chicken

by Erin, The $5 Dinner Mom on June 17, 2010

It’s a toss up.
They are both just so yum-ilicious!
Ingredients
1 package chicken thighs ($2.26) Manager’s Special
Fresh basil, oregano, thyme (from the garden)
1 jar favorite marinara or spaghetti sauce ($.99) Coupon and sale
Salt and pepper

Buffalo Chicken Wings

by Erin, The $5 Dinner Mom on March 18, 2010

Half of the family has finished their dinner.
The other half was sidetracked by the gorgeous weather, and the desire to use every moment of sunlight to work on “opening up the garden.”
(Nevermind that it might snow next week.  I’ve GOT to get my seeds for the spinach and lettuces, or is it LETTUCI?!, into the dirt.)
So [...]

by Erin, The $5 Dinner Mom on March 16, 2010

SPLURGE ALERT!!! CONVENIENCE FOOD ALERT!!!
(BTW I have loved hearing your do’s and don’t’s when it comes to convenience foods!)
It was one of those days.  It started too early. It was filled with distractions. And a few schedule changes. And it left me in no mood to cook.  Y’all have those days too, right?
There is [...]

Ingredients
3 chicken breasts, cubed ($2.87)
3 Tbsp canola oil ($.15)
1/4 cup soy sauce ($.40)
1 [...]

One of my dear friends moved to Alaska not long ago…and she left me with a few of her goodies from her pantry…including the Marsala cooking wine you see below!!!  Not something I [...]

Honey Ginger Salmon – $5 Dinner Challenge

by Erin, The $5 Dinner Mom on January 18, 2010

Several times in 2009, I found fresh Atlantic salmon on sale for $2.99/lb…regularly $7.99/lb!  This great deal never appeared on the front page of the store circular…but was hidden on the inside pages!
I asked for a pound. Brought it home. Cut it into 4 4 oz. portions. Added the marinade. And froze.
Saturday night, it went [...]
