Slow Cooker Peach Oatmeal

So, we have a peach issue around here. Not only do we like to eat them. We like to throw them. (And by ‘we,’ I mean Cuatro.)

It’s not my fault that they look exactly like tennis balls…and that they beg to be thrown, when you are an 18 month old.

A few weeks ago, I kept hearing thud. Thud. THUD. {giggle from an older kid} More thuds. Thuds. THUDS. {full blown laughter}

I was in the kitchen working on something and came around the corner into the dining room (at that time, it was the staging area for our July 4th Ranch Weekend Getaway!)…video on Instagram.

Last summer I would get 1 case of peaches from Costco and it was the perfect amount for us to get through in a few days before they would go bad. This summer, my boys have declared that peaches are all of their favorite food and that they don’t want to eat any other fruit besides peaches. (We can go through 1 case/tray in 24 hours.) So now I buy 3 cases at a time…eat most of them, cook with some.

This is why you are getting 2 peach recipes in one week. Monday, I shared the Peaches & Cream Baked Oatmeal (which Tyler declared delicious and requested it for his birthday breakfast). And now this slow cooker oatmeal. And I’m happy to report that we have finished off the 3rd case/tray. And we all might have overdosed on Vitamin C & Potassium.

Now, if you’ll excuse me…I need to offer a few different fruits to the boys besides peaches…

Slow Cooker Peach Oatmeal

This stuff is ridiculously delicious. It's the brown sugar-ginger-peach combination, also known as a party on your taste buds.

Servings - 4 servings

Ingredients 

  • 1 cup steel cut oats or regular rolled oats
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp salt
  • 1 Tbsp butter softened
  • 2 1/4 cups milk
  • 3 ripe peaches pitted and diced

Instructions

  • Lightly grease the inside of your slow cooker with non-stick cooking spray.
  • Whisk together all ingredients (except peaches) in a mixing bowl. Gently stir in the cut up peaches. Pour into the base of a slow cooker.
  • Set on low and cook for 4 hours. Let set on warm setting up to 4 hours. Stir well before serving.
  • Serve Slow Cooker Peach Oatmeal with milk, cream or yogurt.
