I love cooking from scratch when I can, but there are some days when quick and easy is a must.
Zatarain’s jambalaya mix is delicious right out of the box, and when it goes on sale I stock up for this quick and frugal meal. Pair it with a green salad for a perfect dinner!
Jambalaya
1 box Zatarain’s jambalaya mix ($1)
1 12 oz. package smoked sausage ($1.50)
1 Tbsp oil ($0.03)
1 can black beans ($0.69)
Salad
1/2 head iceberg lettuce ($0.40)
1 roma tomato, chopped ($0.70)
1/2 cucumber ($0.35)
favorite dressing ($0.10)
Slice sausage and brown in canola oil. Add jambalaya mix following package directions. Drain beans and add right at the end of cooking the rice.
Serve with a chopped salad.

I love Zatarain’s jambalaya. I make mine with a combo of chicken, sausage and shrimp, just a little of each though. I also add okra, canned tomatoes and top with diced green onions. Delicious!
We love some Zatarain’s!! Even my 6-year-old picky eater loves it!
Have you ever had Zatarain’s Cheesy Jambalaya mix? Its a million times better than the plain. I love to keep a box in the pantry and sausage in the fridge for a last minute dinner. I throw in whatever vegetables are sitting in my fridge– usually a tomato, some green onions and sometimes some green pepper. The only downside is this dinner is very high in salt

when i make boxed rice dishes i will added a 1/2 of rice and 1 cup of water it gives it more servivings with less salt…
My family loves Zatarains too!! I always feel like I am giving my family a home-cooked meal on the quick and cheap. In regards to the high salt, they do sell a low-sodium brand but it is often not on sale when there is one.
