    {Dill and Lemon Deviled Eggs, from Safest Choice Eggs}

    I never paid too much attention to eggs…until I lived overseas. Prior to this, I ate raw cookie dough and enjoying my near-raw eggs in different forms. And then I learned that not all eggs are created equal, or safe to eat. And I experienced first hand, on multiple occasions, that not all eggs are created equal. Eating raw cookie dough was forbidden…absolutely forbidden. Making sunny-side up eggs was not an option. Never got to enjoy eggs with hollandaise in the time I was down there. And when cooking with eggs, you had to crack each individual egg into a small bowl before adding to the bowl you were using to whisk the scrambled eggs or make the cookie dough. Why? Much higher incidence of bad eggs. (And if you cracked them into a small bowl and found they were bad, you didn’t have to throw out the whole batch. Six years…this is how I did eggs.

    Needless to say, I became a bit leary of eggs…and it stuck with me as I returned to the US.

    A little info that I find helpful these days, as a mom…a currently pregnant mom ~ The Safest Choice egg pasteurization process eliminates the risk of Salmonella in eggs before they even enter your kitchen.       My favorite way to prepare eggs is boiled, cut in half, sprinkle with curry powder and cumin and served along side with seasoned chick peas.
