You know what.

There are just some days when all I want for lunch is that.

An ooey, gooey, melt in your mouth stacked grilled cheese sandwich.

Stacked?

Yes. Stacked.

While my mom wasn’t the greatest in the kitchen, she knew how to make a mean, mean grilled cheese. She didn’t hold anything back when buttering the bread…on both sides. And she always made each sandwich with two slices of cheese.

I have vivid memories of learning how to make grilled cheese on my own for the first time. It was probably the first food I learned to cook for myself, and I made it just like my mom! And don’t tell her, but sometimes I snuck a third slice into the sandwich. Mmm.

We just like good old fashioned grilled cheese sandwiches. Sometimes a slice of onion may get used with some mozerella cheese instead of cheddar.

My loving hubby taught me to upgrade my grilled cheese. Start with traditional excellence of the Kraft American slice, then add a slice of provolone and a sprinkle of Kraft Shredded Mozzarella then top with another slice of Kraft American. Cook slowly until golden brown and crispy on both sides which leads to an ooey-gooey melt in your mouth center with tones of cheese taste.

I’ve always made a standard grilled cheese, although my husband suggested a slice of tomato on the sandwich. I didn’t care for it as much. One of my friends calls them cheese toasties.

Buttering both sides is key to the best flavor. I will add a smashed fried egg for extra umph while the heat from it melts the cheese perfectly, and serve it up for breakfast.

Thinly sliced eggplant grilled, pesto mayo, sun dried tomatoes and mozzarella put this all on the best Italian bread. Grilled together to be gooey and melty.

I love Panini, and make a really delicious one with brown wholemeal bread, Kraft American Cheese, Emmenthal cheese, onions, oregano and a little chopped tomato. We call it the Italiano!

My favorite way to make grilled cheese is with hummus, usually tomatoes, mozzarella and hummus spread on a good crusty bread. Since I don’t have a panini press, I weigh it down with a griddle.

My favorite way to make a grilled cheese sounds pretty similar to your recipe. I just butter one side of the bread though. I’ll have to try the buttering of both sides. Butter makes everything better right? :)

I love to make grilled cheese with gueyere cheese, apple slices, and sometimes bacon or tomato. So yummy!
