You know what.

There are just some days when all I want for lunch is that.

An ooey, gooey, melt in your mouth stacked grilled cheese sandwich.

While my mom wasn’t the greatest in the kitchen, she knew how to make a mean, mean grilled cheese. She didn’t hold anything back when buttering the bread…on both sides. And she always made each sandwich with two slices of cheese.

I have vivid memories of learning how to make grilled cheese on my own for the first time. It was probably the first food I learned to cook for myself, and I made it just like my mom! And don’t tell her, but sometimes I snuck a third slice into the sandwich. Mmm.

    We like to add some sweet vadalia onions to our grilled cheese sandwiches. Of course you can’t take the sandwich out of the pan until the cheese has reached the perfect—“almost dripping” stage :)

    Grilled cheese? Try this !

    Some Jarlsburg or Gruyere then add some artichokes and mushrooms and sun-dried tomatoe !

    Another really good combination… piles of Monterey Jack and some green chilies or jalepenos !

    The best one my family loves is with a Kraft American Single, Muenster slice, and some Colby Jack with mayo on the inside and buttered outside! Yummy!

    I have actually never made grilled cheese without a regular old pan, butter, and cheese of whatever variety I have around. But then, I’ve never had a panini press 😛

    I spread raw horseradish on 2 slices of whole-wheat bread, top 1 slice with 1 slice of cheddar cheese, topped with 3 rings of purple onions, and then 1 slice of gouda cheese, followed by the top slice of wholewheat bread. Put it in the sandwich maker until lightly browned.

    My friend had a recipe using a mustard, raspberry & butter spread using muenster or provolone as the cheese & a slice of ham. it was delish! I have not been able to recreate it yet, come close.
    I also like using rye bread with a slice each of muenster and american.

    I make grilled cheese by spraying nonstick spray on the outside pieces of the bread. I put a slice and a half of cheese inside. Then I make 4 of these and put them inside my preheated 4-slot waffle maker. It gets them done in no time!

    My favorite way to make a grilled cheese is to take a lotta butter and spread it on the outside of the bread and get to cheese slices make sure the cheese goes all the way to the edges and then put on the griddle and cook it until golden brown. Oh its very good the cheese oozes out!

    My favorite way to make a grilled cheese sandwich is under the broiler. Two slices sourdough, slices of sharp cheddar, salt & pepper. Perfection with a bowl of creamy tomato soup!

    I’m happy with just one slice of cheese on two slices of buttered bread–I’m a traditionalist that way :)

    I take 2 slices of sourdough (fresh cut from loaf) and butter outside. Shred extra sharp cheddar (melts faster and more evenly). Put together and grill in hot pan. It is wonderful served with tomato-basil soup. Or put sliced tomatoes and fresh chopped basil in the sandwich before grilling and it mixes with the melted cheese. Comfort food!

    We like to make grilled cheese on sourdough bread with mixed shredded cheese and slices of tomato. YUMMY !!!! Also very delicious if you spread a little pesto on the inside of the bread.

    My fav is loaded with cheese, any cheese and a mix is best. Hubby dips his in a blend of spicy brown mustard and ketchup.

    I love getting creative with my grilled cheeses! I once saw a show on Food Network where they had three spinners: one with kinds of bread, one with kinds of cheese, and the last with kinds of jelly. They challenged people on the street to spin all three to creative a unique grilled cheese sandwich and the results were that every combo rocked! Since then, my favorite grilled cheese has been provolone with McCormick Italian Spices on any kind of bread with strawberry jelly. SO, SO GOOD!
