    Growing up there were ALWAYS two thing that could be found in the pantry…at ALL times!  Tortilla chips and PACE PICANTE SAUCE!  (Let’s just say my dad had has a slight obsession with the stuff!)  So when Pace asked if I wanted to do a giveaway, I was thrilled.  For nostalgia’s sake!

    The lovely folks at Pace are giving away 5 different flavors of the Pace Specialty Salsas, along with a cookbook, so you can put your salsa to good use!

    Pictured above are 3 0f the specialty flavors, Tequila Lime Salsa, Black Bean and Roasted Corn Salsa, and Pineapple Mango Chipotle Salsa.  Winner will receive 5 jars of the Pace specialty salsas!

      I have tried the Black Bean and Roasted Corn Salsa. With this a just a few other ingredients, I was able to make some delicious Chicken Enchilidas!

      I just mixed a jar of the Black Bean and Roasted Corn Salsa with some leftover shredded chicken and shredded cheddar cheese. Rolled some of the mixture up in flour tortillas, placed in a baking dish and topped with a little cheese. Baked in the oven @ 350 for about 30 minutes……. yummy!

      As far as using the salsa..I once wanted to use up some pepper relish type salsa so I just tossed it in a pan with diced chicken and served over rice..it was fantastic! And no one could figure out what I used to get that spice/red pepper flavor. I’d love to try this with one of these new specialty sauces.

      I love making Tex Mex Scrambled Eggs with Salsa and a dab of sour cream, though we usually eat these for dinner instead of breakfast. My son calls it brenner! LOL

      My family’s favorite tex-mex food is tostadas. They are cheap, easy, healthy and the crispy shells store much longer than tortillas!

      Recipe:
      Big package of tostada shells ($2-4 depending on size)
      homemade or canned refried beans
      shredded cabbage, sprinkled with lime juice
      chopped tomatoes
      crema (sour cream)
      salsa or hot sauce
      sliced avocado

      Heat shells in the oven. Top with heated beans. Sprinkle with salsa, add shredded cabbage, and top with tomatoes, sour cream and avocado. Very delicious, and a little goes a long way! My five year old calls them “mexican pizzas” 😉

      We love to use salsa in a lot of things. For breakfast I love making scrambled eggs with sauteed onions and peppers and garlic then serve it with salsa on top. Sometimes we will take it all and put it in a tortilla shell for a breakfast sandwich.

      I use Pace Salsa to make easy quesadillas. I marinate chicken breasts in Pace. dump the chicken and the salsa in a pan cover with foil and bake at 350 til chicken is no longer pink. Remove the chicken from the pan, let cool slightly then shred with 2 forks. put the shredded chicken in a container with more pace & a little mexican seasoning and mix. place shredded chicken mixture and cheese between 2 tortillas in a pan and heat until cheese is melted and tortillas are browned. (turning 1/2 way thru)
