I had a great time this morning in Dallas, and I’m headed back home to my baby. Well, not so much baby. Anymore. If I wasn’t expecting another one, I’d be a mess right now. This whole kid-life thing is happening way way way too fast. And then there’s the whole tension of “want them to grow up to be independent, but want them to stay close and little forever.” Gah…what’s a mother to do? I can’t and don’t even want to think about dropping them off at college. The mere thought makes me want to curl up in a ball and start rocking and mumbling. They don’t tell you these things in the pregnancy books…although I don’t think it would matter if they did. Life is wonderful and we’re so blessed to be raising up these rambunctious and independent boys!

We are a family whose paychecks are 15 days apart. I have found that we save money and time by planning what we are going to eat for 15 days. No more looking in pantry or freezer to see what I can possibly find for dinner. No more running to the store for that last minute item that I need for a recipe. I look at my calendar and know exactly what’s for dinner. And my family no longer asks “What’s for dinner”. They check on the refrigerator and they know.

My current favorite is to make my own iced tea! Brew on stove, add some Truvia (just started using this, I am a fan!) and some lemon. Super cheap! My family still begs for soda but I just ignore them…..

My favorite way to save time and money is batch-cooking my meat. For example, cooking a crockpot full of boneless, skinless chicken breasts, shredding it all in the mixer, and storing in meal-size portions in the freezer.
