These sound really good as I love granola bars but can't eat the store granola bars anymore since going gluten free. However, I really don't like coconut. Is there anything gluten-free I could use to substitute the coconut?

I made these tonight. Didn't want to ground the flax seed so I just added a smaller amount of the seed. Added some golden raisins I had on hand, and forgot the vanilla. Still superb! Next time (in the next few days I am sure) I will make more and try it with almond extract. Soooo goood!!

I just made these today and they were wonderful and so easy to make. I used raw almond butter (unsweetened) and unsweetened coconut and they were still plenty sweet for hubby and me. Thanks for posting!

After this post on Facebook I decided this would be part of our "school" for today. I had the kids help me measure and mix it. When we got done I let them taste it before we put it in the frig. My 5 year old said, "These are really healthy too!" :D
