Menu Plan Monday – The Soup Week Edition

It’s Soup Week around here.  I planned a soup week at the beginning of October thinking it would be nice and cool outside.  Thinking I’d be ready for a warm bowl of soup or stew every night this week.

Well.  It was 77 degrees today…and is supposed to be in the 60s and 70s for the rest of the week. Not quite soup weather…but I’m sticking with the plan anyways!!!

Also, this is going to be a Pantry Challenge Week…more on that in tomorrow’s shopping trip post. The plan is to just spend $20 (maybe $25) at the grocery store and do all the rest of my shopping from the pantry and freezer.

Monday - Black Bean and Salsa Soup (Becky invited us over for a soup fest and pie tasting party. Can’t wait!)

Tuesday – Dinner at Church – Bringing Side Dish

WednesdayLynn’s Panera CopyCat Soups

Thursday – Pasta…probably spaghetti (I’m running 10 miles on Saturday…carbo load!)

FridayTaco Soup, using Taco Meat from the freezer and homemade taco seasoning

Saturday – Sandwiches or Leftovers

Sunday - Chili

We love soup during the fall and winter. It has been warm here in OK also, but since the calendar says fall I have been making soup the last few weeks. Soup is a perfect frugal and filling meal.

It has definitely become soup weather here in central CA. We had rain last night and it was cool and blustery today. Tonight was leftover white chicken chili I made in the cp yesterday. I’ll be cooking a turkey noodle soup with the leftover bbq turkey breast from Saturday and the homemade stock from the back and ribs for tomorrow. I see lentil soup on the horizon too. Mmmmm, I could eat soup everyday but I think the hubs would get a little cranky and demand MEAT and TATERS, lol.
