
I still can’t believe how wonderful the weather has been this early in April. We’re planning on being outside grilling again this week…as the forecast is almost too good to be true. (Which probably means that it will rain every afternoon, right?!?)
I’m also planning on doing some Batch Cooking this week…squeezing it in here and there. I’d like to get the freezer re-stocked with some…
- spaghetti sauce
- taco meat
- breakfast burritos
- pumpkin chocolate chip muffins
- pumpkin pancakes
- banana cinnamon waffles…
- and lasagna for Steve to take for lunch!
Having a stash of these family favorites makes for quick and easy meals on the weekends!
And here’s what we’ll be having for dinner this week…
Monday - Tuna Noodle Casserole
Tuesday – Grilled Chicken Pesto Pasta
Wednesday – Grilled Inside Out Burgers
Thursday – Burritos
Friday – Chana Masala (Reader Recipe)
Saturday – Spaghetti
Sunday - Leftovers or Tuna Sandwiches

I don’t have a recipe posted…I usually just do some eggs with bacon or sausage and cheese…whatever I’ve got. Wrap and freeze! He pulls them out the night before he wants to have them for breakfast and reheats in microwave!
@Erin, The $5 Dinner Mom, Thanks–I don’t think I knew I could freeze eggs. Do you freeze them in plastic wrap or baggies?

Yes…once scrambled they can be frozen. I wrap the 2 breakfast burritos in foil and then into plastic baggies. Steve can then put them in the fridge to thaw, then onto a plate (without the foil!) to reheat.

I made the pumpkin chocolate chip muffins over the weekend. Kids love them. Bonus points for being able to get some pumpkin out of the freezer.
Do you still have a stash of pumpkin or do you have a secret supplier? I made some pumpkin cc muffins about 2 months ago but it was the last bag of pumpkin from the freezer…

Never heard it called “batch cooking” before. But it is always a nice idea for workings mom’s who cant pull off the once a month thing.
