I’m hoping to squeeze in a little batch cooking while I’m in the kitchen this week, and here’s what I need to whip up:
- Black Beans – To Freeze and also to make Black Bean Brownies (from scratch)
- Kidney Beans
- Banana Chocolate Chip Muffins – For snack and freezer
- Blackberry Muffins – For snack and freezer (Recipe coming soon)
- Cranberry-Apple Muffins – For snack and freezer (Recipe coming soon)
- Triple batch of pancakes for the freezer
This week, I’m also planning a Pantry Challenge and hope to spend less than $30 at the store this week. There are lots of great sale prices on produce, so it will be tough to come in under $30, but I’m going to try!!!
If you haven’t taken a peek at the Pantry Staples List and Recipes, now would be a great time to do so…I’ll be cooking from the pantry and freezer all week, and might just sneak in one of these recipes.
I might add that summer has come early to SW Ohio. It’s supposed to be in the high 80s all week…so I’ll be turning on the oven once. To make muffins! Rest of the meals will be from the grill or the slow cooker.
(And remember, if you don’t want your slow cooker to heat up your kitchen, put it out on the porch! Thanks to Lynn for that tip!)

Wednesday – Red Quinoa Dish
Thursday – Taco Roast Beef – Slow Cooker
Friday – Grilled Balsamic Chicken
Saturday – Burgers on the Grill
Sunday – Out with family
Monday/Memorial Day – Grill out with some great friends!
