Mango Chicken

Welcome to the $5 Dinners Kitchen! Kate from A Simple Walk has asked me to share 7 of my favorite things about my kitchen…so come on in!

My “Cookbook Nook”…can you find the post-its…that’s my current method of organizing my GF baking recipes! I am finding that it is cheaper to bake goodies than to buy them prepackaged! Several of my cookbooks can be found here!

My “Roosters”! I love these guys! And do you see my Shiny Sink?

My Little Guy who LOVES his sweet potatoes, pork and canteloupe! This is a typical lunch for my little men!Our “Pet Gorilla” in the “cereal garage”…This is my guys’ favorite GF (gluten free) cereal…we call them “baby puffs”…Thankfully Trader Joes carries these for CHEAP! Well, cheaper than other stores! Can you spy the free box of Oatmeal in the back???…I’m getting another one this week…thanks to Cellfire!

My Magnetic Monthly Calendar! I live by this thing…it seriously keeps my brain functioning! Seriously, I would forget what month we were in if it weren’t for this thing…

And the bottom of the fridge…Toddler entertainment! The boys play (read…create a mess!) while I prepare meals…And I can help them with “phonics” and the ABC song while I dice and mince…Multi-tasking at its best!

I love that my kitchen has space to “store” all my groceries and my “stockpile”…but really, my stockpile is not that huge! Here is this week’s groceries…$39.93 ($4.93 over what I planned), but still not bad for getting a lot of produce and a few stockpile items!!! Overall saved 48% according to the receipt. Had to shop with my kids…Tips on how to do that here! Another free oatmeal… and… Tower of cream cheese + Neslte mini chocolate chips = Pumpkin Chocolate Cheesecake! You’re ALL welcome to come over for a slice!

Mango Chicken

2 boneless skinless chicken breasts ($2)
1/2 cup Mango Marinade ($.25)
1-2 cup basmati rice ($1)
Green Beans ($1.49)

Dessert! *gasp* GF Chocolate Chip Cookies ($.32)

1. Marinate chicken in Mango Marinade (or other favorite!). Bake at 350 for 45-50 minutes.
2. Cook basmati rice according to directions on package.
3. Snap off the “stems” of the green beans. Steam green beans in steamer or saute in EVOO (extra virgin olive oil). Simple, nutritious and wholesome dinner!

LOVE your cereal garage. Good job on the $35 goal. As you know, I went over my $35 last week by about $8-9. But, I might actually make it this week–haven’t even thought about going to the store!

Your dinner sounds great too. I had no idea there was a mango marinade available. My kids love mango. I might have to try that sometime…mango chicken just sounds delicious.

I use my magnetic board for schedules and my 3 jobs. I will now be adding my “menu” on it for the month. I shop 2 times a month, with a grocery list and a budget. I’m hoping to do much better. It has now become a challenge and a game for me. Great site1
