Magda’s Chicken and Veggie Wraps with Homemade Greek Yogurt

This is a great way to use some leftover cooked chicken and makes a wonderful lunch or dinner that doesn’t require heating up the kitchen! Here it is shown paired with Magda’s Czech Style Potato Salad  (also leftover from the night before) .
Chicken & Veggie Wraps with Homemade Greek Yogurt
Yield – 3 servings
Preparation Time – 5-10 minutes
Cooking Time – 0 minutes
- 1/2 cup cooked chicken, chopped
- 1/2 tomato, diced
- 1/3 red pepper, diced
- 1/4 English cucumber, diced
- 1-2 tablespoons greek yogurt* (See the note below on making your own Greek yogurt.)
- salt and pepper to taste
- 3 small whole wheat tortillas
- Combine the chopped chicken, vegetables, yogurt and salt and pepper in a small bowl.
- Divide in three and put 1/3 of the mixture into each tortilla and then wrap the tortilla around the filling.
- Secure with a toothpick.
- Serve with one or more salads on the side.
Homemade Greek YogurtMake your own Greek yogurt and have some great whey liquid to use in making bread, soups and other recipes.
- Line a large strainer with cheese cloth or a coffee filter and suspend it over a bowl.
- Put regular yogurt into the lined strainer and leave for a few hours (the longer you leave it, the thicker your Greek yogurt becomes).
- When your yogurt is as thick as you want it, remove it from the strainer and store as usual.
- Use the whey liquid instead of water in baking or in soups, stews, etc. It adds a touch of sweetness and extra nutrition to your recipes.Homemade Greek yogurt is also environmentally friendly. Commercial preparation of Greek yogurt produces whey liquid that is not used, but has to be treated to remove sugars that would otherwise encourage bacterial growth in our water ways.
Magda’s Frugal Tip: Cooking dinner every night can be a real challenge, even when you are prepared, sometimes, you just don’t feel like cooking. When that happens, you need a little more incentive than just being healthy and saving money. As much as these are really noble and worthy goals, they are too long term to combat the “I am too exhausted, cranky, bored, or whatever, to cook” syndrome. Figure out incentives or motivating things for yourself to use on those evenings (or middays or mornings). This can be as simple as putting on a great song with a beat that motivates you or promising yourself a bubble bath or a more formal incentive program like getting stars on a calendar that you can then trade for other things (think grade school behaviour charts — they worked then and they can still work now).
