My husband loves to eat fried rice, but an order of Chicken or Pork Fried Rice at our local Japanese restaurant is $6.95. Fried rice is so easy to make and super cheap, not to mention that it can be made almost entirely out of leftovers (one of my favorite qualities in a recipe).
Leftovers Fried Rice
Yield – 4 servings
- 2 cups of leftover cooked rice (Jasmine or Basmati are highly recommended)
- 1/4 – 1/2 onion, diced
- couple cloves of garlic, minced
- 1 carrot or other leftover vegetables
- half of a pork chop, handful of ground beef, small leftover piece of chicken or other leftover meat (leave this out and have a vegetarian meal!)
- 1 egg
- 3 T butter, divided
- Salt and pepper to taste
- 2 T vegetable oil
- couple squirts of yellow mustard
- soy sauce to taste
- 1-2 T of toasted sesame seeds
- Start with 2 cups of cooked rice.
- Finely dice a little bit of onion and mince some garlic. (If your family likes a lot of onion or garlic use a lot, if your family doesn’t like much just use a little. You can also use onion powder, dried onion flakes, or garlic powder if you don’t have any fresh.)
- Dice up a carrot, or pull out some leftover vegetables that you want to use in your fried rice.
- Chop up your leftover meat (optional) and set it aside with your diced vegetables.
- Use a wok, large cast iron skillet, or any large skillet and scramble an egg in butter with a little salt and pepper over medium heat. Dice it up with your spatula.
- Set the cooked egg aside with your vegetables and meat. (If you had some leftover scrambled eggs from breakfast, you could use these here instead.)
- Now heat your skillet up to medium-high heat with about 2 tablespoons of oil in it. Heat until the oil is quite hot and shimmery looking.
- Add your rice, vegetables, meat, onion, garlic, etc. to your pan. Work in a couple tablespoons of butter. Let the rice cook for a bit on the bottom, then turn it over and move it around so that fresh rice is on the bottom. Continue doing this until the rice starts to get slightly golden.
- Next add a couple of good squirts of yellow mustard and some soy sauce. Mix this in and let it warm for a bit.
- Stir in some toasted sesame seeds and your rice is ready to serve. Enjoy.
