Guinness Beef & 15 Bean Stew

Have you ever added beer into your chili or stew? If not, I highly recommend trying it! The added depth of richness and taste is remarkable.

When I think about meals that I’ll make over and over and over for my boys as they eat their way through the teenage years, these are the kinds of meals that I plan to serve them.

Hearty. Filling. Delicious. And super easy to make (so they can make it for themselves too!) The best kind of comfort food for this fall and winter!

Beef, beans and potatoes…perfect dude food. (P.S. Great for the ladies too…I loved this stew!)

Guinness Beef & 15 Bean Stew

So hearty and filling!

Servings - 8 servings

Ingredients 

  • 1 lb. bag Hambeens 15 Bean soup mix
  • 2 Tbsp olive oil
  • 3 lbs stew beef
  • 2 cups Guinness Draught beer
  • 4 cups beef stock or broth
  • 15 oz can tomato sauce
  • 2 lbs baby potatoes (or small red potatoes, halved)
  • 4 whole carrots, peeled and sliced
  • 1 small white onion, chopped
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  • Soak beans as directed. In a large saucepan, cook the 15 Bean soup mix as directed. Drain well before adding to the stew.
  • In a large saucepan or stock pot, heat up the olive oil, then add the beef stew pieces and brown on all sides. Once browned, deglaze the bottom of the pan with the Guinness draught beer.
  • Stir in the beef broth and tomato sauce and bring to boiling. (If you want thinner stew, you can add more broth at the end of the cooking.)
  • Once bubbling, add the baby potatoes, sliced carrots, chopped onion, garlic powder and salt and pepper. Bring to boiling again and simmer for 15 minutes, or until potatoes and carrots are tender and beef is cooked through.
  • About 5 minutes before serving, stir in the cooked beans. Add any additional liquid, if necessary. Season with salt and pepper to taste.
  • Serve Guinness Beef & 15 Bean Stew, as one dish meal. Or with a chunk of bread.
