We love “club quesedillas” – flour tortillas, bacon, turkey and shredded cheese, with mayo + lettuce. Easy and YUM.

If I have hamburger thawed, then I might do a “ghoulash” type casserole, or “Mexican” (soft tacos, cheese, mexi rice, canned tomatoes, salsa, taco meat), or sloppy joes. With chicken I have quickly made chicken & noodles, chicken & rice, or a mexican casserole using chicken. For those days when nothing is thawed (and I don’t feel like defrosting it), spaghetti is always on hand and by far the easiest.

My quick easy go-to meal is my mom’s Beef Stroganoff. Cream of celery, sour cream, cooked ground beef, mushrooms and diced onions- pour over egg noodles..YUM! I serve with a salad.

My favorite go to meal is Bowtie Pasta. It is quick and easy to prepare and I almost always have the ingredients on hand. It has bowtie pasta, sausage, spaghetti sauce, tomato sauce & italian seasoning in it.

My easy weeknight dinner is chicken. I grill it ahead of time and freeze batches of it, then I can pull it out for salads, shred for potato bar, or put into tortillas or any number of quick dinners.

My favorite easy weeknight dinner for my four kiddos is Individual Sloppy Joe Pizzas!!! Browned and drained ground beef mixed with a can of tomato soup, put that mixture on top of individual sized pizza shells, top with cheddar and bake in a 450 oven for about 15 minutes or so…..so easy and so yummy….I usually serve it with a big bowl of salad……
