We love “club quesedillas” – flour tortillas, bacon, turkey and shredded cheese, with mayo + lettuce. Easy and YUM.

  2. Robin Jones says

Our easy meal is omelets – everyone can have their favorite “fillings” and everyone is happy and full.

  3. Barb says

Turkey pot pie–or anything else I previously put together and froze and can just pull out of the freezer and into the oven.

If I have hamburger thawed, then I might do a “ghoulash” type casserole, or “Mexican” (soft tacos, cheese, mexi rice, canned tomatoes, salsa, taco meat), or sloppy joes. With chicken I have quickly made chicken & noodles, chicken & rice, or a mexican casserole using chicken. For those days when nothing is thawed (and I don’t feel like defrosting it), spaghetti is always on hand and by far the easiest.

My favorite easy weeknight dinner for my four kiddos is Individual Sloppy Joe Pizzas!!! Browned and drained ground beef mixed with a can of tomato soup, put that mixture on top of individual sized pizza shells, top with cheddar and bake in a 450 oven for about 15 minutes or so…..so easy and so yummy….I usually serve it with a big bowl of salad……
