    My favorite quick weeknight meal for my four kiddos is Individual Sloppy Joe Pizzas!!! I brown and drain some ground beef, mix it with a can of tomato soup, put that mixture on top of individual sized pizza shells, top with cheddar and bake in a 450 oven for about 15 minutes or so…..so easy and so good….I usually serve it with a big bowl of salad……yummy!!!

    Bean and cheese chalupas, using canned refried beans and already -toasted corn tortillas. Super good and quick!

    Sandwiches – saute onion, mushrooms, bell peppers; season with salt, pepper, cilantro leaves and lime juice. Serve with toasted bun, and lemon aioli. With fruits.

    My favorite quick and easy weekday meal is spaghetti and marinara. I always keep some on hand for those days were I work a 12 hour shift, or the chicken refused to thaw out in the refrigerator.

    My favorite simple weeknight dinner is called Favorite Rice. We basically add hamburger meat to Rice a Roni, very simple and we always have it on hand.

    my easy weeknight meal is baked sweet potatoes. I know it sounds simple but they’re really filling as a meal and with a bit of foresight you can do them in the crockpot or throw them in when you get home and in an hour have dinner without having to worry about a thing!
