Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

April showers bring May flowers? Or in this case…May snow??? Hope everyone survived last week’s crazy weather! While we didn’t have snow here in San Antonio, I had to dig out the jackets for school on Friday and we missed out on our swimming lessons. Brrr.

Hope you enjoy this week’s recipes…some serious tastiness happening here!

Thai Chicken Pizza

1 homemade pizza crust recipe
2 cups shredded chicken breast
1 tsp olive oil
1 tsp curry powder
1/2 cup pizza sauce
2 cups shredded mozzarella cheese
1/2 red pepper
1 small red onion
3 cilantro bunches
Serve with baby carrots or other fresh fruit or veggies

Stuffed Sweet Potatoes with Mango Black Bean Salsa

4-6 medium-large sweet potatoes
2 medium mangoes
1 can black beans
1 small green pepper
1/2 red onion
1 Tbsp lime juice
1 tsp ground cumin
1/2 tsp ground cinnamon
Butter, optional

Spicy Mandarin Orange Chicken

1 1/2 cup white or brown rice
2 chicken breasts
1/2 cup flour (use brown rice flour for GF option)
1 tsp garlic powder
1 tsp onion powder
2 tsp orange peel
2 Tbsp olive oil
1/2 cup Frank’s sweet chili sauce
1/4 cup orange juice
1 Tbsp minced onion
1 tsp minced garlic
1 tsp ground ginger
1 can mandarin oranges

Tricia’s Ultimate Loaded Quesadilla

8 large, flour tortillas
approximately 1 1/2 – 2 cups pimento cheese or shredded cheese
fresh spinach
1 avocado

Pasta Alfredo Casserole

12 oz. pasta
2 cups carrots
2 cups frozen or fresh peas
1/4 cup butter
2 tablespoons cornstarch (or 4 T. flour)
1 cup milk
1 cup vegetable broth
2 cups mozzarella cheese (or 1 1/2 cups mozzarella and 1/2 cup Parmesan)
2 teaspoons garlic powder2 tablespoons fresh parsley ( or 1 tablespoon dried)
1 cup Italian bread crumbs (easy homemade bread crumbs)

Orange, Mango, Banana Dessert Smoothies

2 oranges
1 mango
1 banana
1 1/2 cups vanilla ice cream
1/2 cup fresh squeezed orange juice

Can I just tell you how much I appreciate that the same items that you only use a little of earlier in the week, you find a way to use the rest of so it doesn’t go to waste! Love it! The orange juice in the sweet mandarin chicken…..my family will drink the rest anyway but I love that you give us a recipe on the same week, the smoothies, that uses it too. That is what is going to save us money! Thank you!
