The $5 Dinners Weekly Meal Plan with Printable Grocery List

Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

Zucchini y’all…rock bottom prices these days, so we’ve included 2 zucchini meals for you this week. Plus a delicious breakfast for dinner & my favorite way to eat mac ‘n cheese!

Southwest Macaroni and Cheese

1 lb. elbow macaroni noodles
8 oz. sour cream
10 oz. Rotel diced tomatoes with green chilies
2 cups cooked black beans, or 15 oz. can black beans
15 oz. can corn
2 cups Mexican blend cheese, or Pepper Jack cheese blend, divided

Trisha’s Slow Cooker Ranch Packet Roast

3 lb boneless beef roast
1 – 10 3/4 oz can cream of chicken soup
1 – 1 ounce package ranch dressing mix
1/2 cup chopped onion

Beef and Zucchini Tacos

1.5 lb ground beef
2 cups zucchini
4 1/2 tsp Homemade Taco Seasoning
Old El Paso – 6 hard shells, 6 soft shells pack
1 large tomato
About 1 cup chopped iceberg lettuce
About 1 cup shredded cheddar cheese
Serve with 4 corn cobs

Baked Zucchini Sticks

2 zucchini, about 2 lbs
2 eggs
1/2 cup plain bread crumbs
1/4 cup Parmesan cheese (optional)
1 tsp fresh herbs
1/2 tsp garlic powder
1/2 tsp onion powder
Marinara or pizza sauce

Connie’s Swedish Meatballs

2 lbs. ground beef
2 Tbsp. oil
1 egg
2 cans cream of mushroom soup
milk (1/2 soup can)
1 cup cracker or bread crumbs
Serve with mashed potatoes (or rice)

Baked Eggs with Spinach, Tomatoes and Garlic

2 Tbsp olive oil
2 garlic cloves
10 oz. fresh spinach
1 15 oz. can diced tomatoes
2 Tbsp minced onion
4 eggs
Paprika, sprinkle as garnish
Fresh fruit as side dish
