Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

It’s Back-to-School frenzy time for some of you while others (including us) have another week or so before school starts.  Let us help you get one thing marked off your to do list with this week’s meal plan!

Scroll down and you’ll see a list of ingredients for each of the recipes included, in the order they are listed above. I’ll include ALL ingredients, including many that you already have in your pantry, refrigerator, or freezer. If you have those ingredients, just don’t click them!

Spicy Southern Chili in Bread Bowls

Bread Bowl Dough

1 Tbsp olive oil
3 cups all-purpose or bread flour
1 packet active dry yeast
1 tsp sugar
1 Tbsp chili powder

Chili

1.25 lb ground chuck
1/2 red onion
4 garlic cloves
1 15 oz can Hunts stewed tomatoes
1 10 oz can Rotel diced tomatoes with green chilies
About 2 1/2 cups cooked pinto beans
2 Tbsp chili powder
Optional Toppings: shredded cheese, sour cream, scallions

Quinoa Soft Tacos

1 cup white or red quinoa
1 Tbsp store bought or homemade taco seasoning
1 15 oz. can black beans
1 15 oz. can corn
1 15 oz. can tomatoes
1 large or 2 small avocados
Small bunch cilantro
8 Flour Tortillas

Slow Cooker Cilantro-Lime Shredded Chicken

1 Tbsp olive oil
3 limes
1 onion
1 lb. chicken breast
1 lb. chicken thighs
Couple garlic cloves
1/2 bunch cilantro
1/2 tsp ground cumin

Yellow Squash Pizza Boats

3 yellow squash
olive oil
garlic powder, onion powder, oregano, basil, thyme
1 – 1.5 cup pizza sauce (Easy Pizza Sauce Recipe)
1.5 – 2 cups cheese
pizza toppings (pepperoni, diced tomato, onions, mushrooms, olives, peppers, etc.)

Berry Quinoa Parfait

1/2 cup quinoa
2 6 oz. yogurt cups
1/2 box raspberries
1/2 pint blueberries
Cinnamon, for sprinkling
8 eggs, scrambled
4 sausage links

Maple Walnut Muffins

1 1/2 cups walnuts
2 1/2 cups flour
1 cup sugar
1 Tbsp baking powder
3 eggs
4 Tbsp butter or margarine
1 cup buttermilk (rice milk worked fine!)
3/4 cup maple syrup
