The $5 Dinners Weekly Meal Plan with Printable Grocery List

Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

There are 2 choices for places to be here in San Antonio these days…inside in the air conditioning, or in the pool. It’s just.too.darn.hot.hot.hot. to be anywhere else. We find ourselves at the pool most mornings/early afternoons, and at home resting in the afternoon. My sneaky little plan each day is to wear out the boys at the pool, come home so they can rest…while I work on dinner, or work, or photos, or whatever. We’ve just fallen into our summertime routine and here comes “back to school” season and schedules! *sigh*

Speaking of routines and schedules, I highly recommend having a meal plan. It’s a huge sanity, time and money saver. Here’s a good one for you to try this week. Let us know what you think of the recipes!

Scroll down and you’ll see a list of ingredients for each of the recipes included, in the order they are listed above. I’ll include ALL ingredients, including many that you already have in your pantry, refrigerator, or freezer. If you have those ingredients, just don’t click them!

Kickin’ Sloppy Joes

1 lb Ground Beef
1 14.5oz Can of Diced Tomatoes with Green Chilies
1 8oz Can of Tomato Sauce
1/2 Cup Ketchup
1 Tbsp Brown Sugar
Buns or Udi’s Gluten Free Hamburger Buns

Taco Bites

1/2 pound ground beef (or leftover taco meat)
1 Tbsp homemade taco seasoning
1/2 small onion
1 small orange or yellow pepper
Tostitos Scoops Chips, about half a bag
Dollops of salsa on each
Pinchful of cheese on each
Side dish – such as brown rice and refried beans

Roasted Red Potato Salad

13 small red potatoes
3 sprigs of rosemary
Drizzles of olive oil
1/2 cup mayonnaise
1/2 cup milk
1-2 Tbsp Dijon mustard

Grilled Chicken Fajita Pasta

3 chicken breasts
1 box bowtie pasta noodles
2 Tbsp canola oil
1 bag frozen peppers and onion blend
1 Tbsp lime juice, for veggies
Dashes ground cumin, for veggies
1/4 cup lime juice, for marinade
Dashes ground cumin, for marinade
Avocado

Strawberry Rhubarb Baked Oatmeal

about 2 cups diced rhubarb
about 3 cups diced strawberries
2 large eggs
1/4 cup applesauce
1/4 cup canola or vegetable oil
1/2 cup sugar
1 1/2 cups milk
3 cups quick cooking oats
1/2 cup wheat flour
2 tsp baking powder
1/4 – 1/2 cup brown sugar

Rice Pudding with Mango and Coconut

2 cups leftover or cooked rice
2 cups milk (I used rice milk)
1/2 cup sugar or preferred sweetener
1 tsp vanilla
1 tsp coconut extract (optional)
2 large mangoes
1 cup sweetened coconut flakes

Maple Roasted Peaches

4 peaches
8 small dollops butter or margarine
8 1/2 teaspoons maple syrup
Dashes of cinnamon
Garnish – whipped cream or vanilla bean ice cream, optional
