Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

I hope everyone had a lovely (and delicious) July 4th holiday weekend. Reality after a 4 day weekend can be rough, but it’s now time to kick it back into gear. If you’re feeling a little sluggish…here are a few meal ideas for you to enjoy this week!

Scroll down and you’ll see a list of ingredients for each of the recipes included, in the order they are listed above. I’ll include ALL ingredients, including many that you already have in your pantry, refrigerator, or freezer. If you have those ingredients, just don’t click them!

Chicken Nachos

2 cups cooked, shredded chicken
1/2 cup frozen corn
1 10 oz. can Rotel tomatoes (diced tomatoes with green chilies)
1 15 oz. can (or 2 cups) black beans
1/4 red onion
Tortilla Chips
1 cup shredded cheddar or Mexican blend cheese
Serve with fresh veggies like broccoli

Mess Free BLT

1 lb package of bacon
3/4 cup flour
8 slices of tomato
1/2 cup onion, chopped fine
3 cloves garlic, chopped
1 cup mayonnaise
1/3 cup Parmesan cheese
8 – 12 lettuce leaves (however much you like!)
16 slices of bread

Walking Stuffed Peppers

½ lb. ground beef
1 small onion, chopped
1 Tbsp homemade taco seasoning
4 yellow peppers
1 15 oz. can black beans
1 15 oz. can corn kernels
1 15 oz. can diced tomatoes, drained
Handful chopped cilantro
About 1 cup shredded pepper jack or cheddar cheese
Serve with brown rice and/or chips with salsa

Santa Fe Chicken Pilaf

1/2-1 lb. cooked & diced chicken
1 package of rice pilaf mix
1 tsp cumin
2 cups chicken broth
1 15 oz. can diced tomatoes
1 15 oz. can black beans
1 15 oz. can corn
Serve with fresh fruit

Red Quinoa with Grilled Summer Veggies

1 small zucchini
1 orange pepper
1/2 yellow pepper
1/2 white onion
2 garlic cloves
1 Tbsp olive oil
1 cup quinoa
Serve with grilled corn on the cob

Oven Tacos

1 lb. ground beef
1 small onion, finely chopped
2 cup black beans
2 Tbsp homemade taco seasoning
1 15 oz. can diced tomatoes
8 taco shells
1 cup shredded cheese
Toppings, or side suggestions – shredded lettuce, salsa, avocado chunks, guacamole, corn

Cream Cheese Stuffed French Toast

10 eggs
1 cup milk
1/8 cup favorite syrup
1/2 tsp cinnamon
about 12 thin slices of French bread
2 “spotty” bananas
4 oz cream cheese
4 granny smith apples
Serve with additional syrup
