The $5 Dinners Weekly Meal Plan with Printable Grocery List

Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

Now that we live in the land of the really cheap Mexican food ingredients, I’m all about these Green Chili burgers, and the fajita melts are a family favorite too! (I use some shredded pepper jack dairy-free cheese for the boys.) We love to get fajitas when we go out for Mexican food…and these are an easy fix at home! Viva la fajita!

Green Chili Burgers

1.2 lb. ground beef
1 4 oz. can green chilies
1 egg
1 Tbsp homemade taco seasoning
4 buns
12 oz. bag frozen corn
Serve with chips and salsa

Cilantro Lime Chicken Casserole

1 tablespoon olive oil
6 chicken thighs
1/4 teaspoon seasoned salt (how to make seasoned salt)
1/4 teaspoon garlic powder
2 cups cooked rice (how to quickly cook rice)
1 3/4 cups corn, or 15 3/4 ounce can
1 3/4 cups black beans (fastest home cooked beans)
2 Roma tomatoes
1/4 cup onion
juice and zest of one lime (frugal tip for when limes are on sale)
1/4 cup cilantro
1/4 cup chicken or vegetable broth (how to make chicken broth)
1 tablespoon honey
1 teaspoon cumin
Serve with a garden salad

Spinach Mushroom Quiche

1 Tablespoon olive oil
6 ounces fresh spinach leaves
8 ounces sliced white mushrooms
6 eggs
3 ounces crumbled feta cheese
1 pie crust, homemade or store bought
1 cup shredded mozzarella cheese

Mess Free BLT

Note: this makes 8 Servings

1 lb package of bacon
3/4 cup flour
8 slices of tomato
1/2 cup onion
3 cloves garlic
1 cup mayonnaise
1/3 cup Parmesan cheese
8 – 12 lettuce leaves (however much you like!)
16 slices of bread

Chicken Fajita Melts

1 loaf French bread
2 chicken breasts, grilled
2 teaspoons fajita seasoning, divided
12 oz bag frozen peppers and onion blend
About 1/4 cup salsa
4 slices Pepper Jack cheese or Cheddar
Serve with fresh fruit like orange slices

Strawberry Blueberry Poppy Seed Salad

1/2 pound strawberries, trimmed and quartered
1 pint blueberries
2 cups chopped peaches
3 tablespoons store-bought poppy seed dressing


Marshmallows (half a jumbo one is perfect for each s’moreo)
2 rectangles from a regular sized Hershey bar or your favorite chocolate squares
