Summer usually translates into leisurely breakfasts and dinners too. (At least that’s how it is at our house, especially on the weekends.) That’s why I’ve included waffles (2 delicious options!) on this week’s plan, as well as some yummy dinners for the grill. Hope you enjoy! Angel Hair Pasta with Julienned Zucchini 1 medium zucchini Couple basil, oregano and thyme leaves 1 large or 2 smaller garlic cloves 1-2 Tbsp olive oil 3/4 lb. angel hair pasta Optional: serve with 2 cups grilled and diced chicken and 1/2 cup grated or shredded parmesan cheese Chicken Wraps with Balsam-melized Red Onions 2 chicken breasts, grilled and sliced 1 red onion 1 Tbsp olive oil 1/4 cup balsamic vinegar Heaping Tbsp sugar Few handfuls green leaf lettuce head 8 burrito size tortillas Serve with fresh veggies Individual Beef Pies 2 tubes store bought pie crust 2 cups-ish leftover spaghetti sauce Pinchfuls of parmesan or mozzarella cheese Serve with fresh veggies and fruit Grilled Pizza Pockets 1 batch homemade crust or store bought crust 1/4 – 1/2 cup pizza or spaghetti sauce Toppings – pepperoni, sausage, olives, green peppers, onions, mushrooms…whatever! 1-2 cups cheese, any variety Fresh fruit, as side item Oven Tacos 1 lb. ground beef 1 small onion 2 cup black beans 2 Tbsp homemade taco seasoning 1 15 oz. can diced tomatoes 8 taco shells 1 cup shredded cheese Toppings, or side suggestions – shredded lettuce, salsa, avocado chunks, guacamole, corn Banana Cinnamon Waffles 1 cup all-purpose flour 3/4 cup whole wheat flour 1/4 cup ground flax seed 2 tablespoons sugar 1 1/2 teaspoons baking powder 1/2 teaspoon ground cinnamon 1 1/2 cups low fat buttermilk 3 tablespoons butter 2 large eggs 1 large ripe banana Gingerbread Waffles 1 1/2 cups flour 2 tsp. baking powder 1/2 tsp. cinnamon 1/2 tsp. allspice 3/4 tsp. ginger 1/2 stick butter 1 Tbs. molasses 1 1/2 cups milk 3 eggs For the Vanilla Cream Sauce: 2 cups milk 1/2 cup sugar 2 Tbs. cornstarch 1 Tbs. butter 1 1/2 tsp. vanilla If you are seeing this in an email or in your reader and you’d like to print your grocery list, then click here to access the list feature, which is only available on the website.
