Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)


Y’all…I wanted to give you a heads up that change is a-comin’ again. The site continues to evolve and change as we see and hear your needs. One of the ways that we will continue to make improvements is in our meal planning. For years, I’ve offered this weekly meal plan for free…but it costs me a great deal of time and money to prepare each week. Soon, I will transition this weekly meal plan to our new paid meal planning subscription service. You can find out more information at We are currently in a closed private beta and are learning a great deal from our beta users’ feedback. I look forward to bringing this new, improved and more comprehensive plan to you each week!

The Recipes

  • Slow Cooker Refried Beans ~ Serve with grilled chicken fajitas…or if you are looking for something simpler, make bean and cheese burritos for a quick and easy summer weeknight dinner!

Scroll down and you’ll see a list of ingredients for each of the recipes included, in the order they are listed above. I’ll include ALL ingredients, including many that you already have in your pantry, refrigerator, or freezer. If you have those ingredients, just don’t click them!

Balsamic Chicken Wraps

2 chicken breasts
1 red onion
1 Tbsp olive oil
1/4 cup balsamic vinegar
Heaping Tbsp sugar
Few handfuls green leaf lettuce head
8 burrito size tortillas
Serve with fresh veggies like green beans

Grilled Pizza Pockets

1 batch homemade crust or store bought crust
1/4 – 1/2 cup pizza or spaghetti sauce
Toppings – pepperoni, sausage, olives, green peppers, onions, mushrooms…whatever!
1-2 cups cheese, any variety – recommend mozzarella and Parm or pizza blend
Fresh fruit, as side item

Angel Hair with Julienned Zucchini

1 medium zucchini
Couple basil, oregano and thyme leaves
1 large or 2 smaller garlic cloves
1-2 Tbsp olive oil
3/4 lb. angel hair pasta
Optional: 2 cups grilled and diced chicken and 1/2 cup grated or shredded parmesan cheese

Slow Cooker Refried Beans

1 lb. pinto beans
1 4 oz. can green chilies (or use jalapeños – 4 oz can, or 1 fresh – if you want more heat!)
1 tsp onion powder
1 tsp garlic powder
1/2 tsp ground cumin

Grilled Pomegranate Chicken with Mango BBQ Sauce

4 chicken breasts
About 1 cup Hidden Valley Pomegranate Vinaigrette Salad Dressing2 cups BBQ sauce
1 cup chopped red onion
1 large mango
Veggie or fresh fruit on the side

Banana Cinnamon Waffles

1 cup all-purpose flour
3/4 cup whole wheat flour
1/4 cup ground flax seed
2 tablespoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1 1/2 cups low fat buttermilk
3 tablespoons butter
2 large eggs
1 large ripe banana

Salted Caramel Brownie Parfaits

Homemade or store bought brownies
1 small box Caramel flavored pudding
2 cups milk
Drizzles of chocolate and/or caramel syrup
Pinchful of coarse sea salt
