Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

A little something for everyone this week…part grill, part sweet treat, part brinner, part salad. Hope everyone is having a great start to their summer!

Green Chile Burgers

1.2 lb. ground beef
1  – 4 oz. can green chilies
1 egg
1 Tbsp homemade taco seasoning
4 buns
Serve with a veggie side like corn

Grilled Mashed Potatoes

about 5 lbs. Klondike Rose potatoes
2 Tbsp olive oil
1 tsp Johnny’s sea salt seasoning
about 1/2 cup milk or sour cream
about 1/2 cup butter or margarine
Chives for garnish and mix-in

Lemon Pasta with Chicken and Broccoli

16 oz. package pasta
1/4 cup olive oil
1 cup onions, diced
4 cloves garlic
2 cups cooked chicken
4 cups broccoli
2 cups carrots
1/3 cup vegetable broth (how to make vegetable broth)
juice and zest of one lemon
1/4 cup fresh parsley (or 2 tablespoons dried)
1 teaspoon seasoning salt (how to make seasoning salt)
1/2 teaspoon thyme

Strawberry Spinach Quinoa Salad

2 cups white quinoa
6 large strawberries
2 handfuls fresh baby spinach
About 1/4 to 1/3 cup chopped or slivered almonds
Dressing drizzles – balsamic, poppyseed, or other sweet vinaigrette

Crispy Ranch Mozzarella Chicken Strips

12-16 chicken strips
2 cups Corn Flakes
2 cups shredded mozzarella cheese
1-2 packets of Ranch dressing (I just used one for a lighter taste)
1 stick (1/2 lb.) melted butter

Spinach Mushroom Quiche

1 Tablespoon olive oil
6 ounces fresh spinach leaves
8 ounces sliced white mushrooms
6 eggs
3 ounces crumbled feta cheese
1 pie crust, homemade or store bought
1 cup shredded mozzarella cheese
Serve with a side of fresh fruit

Pistachio Pudding Parfaits

1 8 oz. tub Cool Whip
2 oz. cream cheese
1/2 cup powdered sugar
2 packages Pistachio instant pudding (plus milk)
Handful of Pistachios
Handful crushed vanilla wafers for each serving
