Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

Can someone please tell me what happened to June? Seriously, it ends tomorrow and it’s like it was swallowed by a black time-hole. Or something. I knew it would be a busy month with ‘end of school,’ co-hosting a conference, 2 weeks of VBS and more afternoons at the pool than I can count on both hands.

We’re working hard to save money this week, so we can splurge on some treats this weekend when we celebrate the 4th!

Grilled Inside Out Cheeseburgers

1.4 lb. ground chuck
1 Tbsp steak seasoning
2 Tbsp Worcestershire sauce
4 slices of cheese
4 Sandwich Thins
Lettuce, ketchup and mustard
Serve with chips and fresh fruit

Baked Mac ‘n Cheese Balls

1 box of mac & cheese or homemade
3 eggs
1 cup flour
2 cups Italian bread crumbs
1 tbs olive oil

New York Pork Chops

4 New York (top loin) pork chops, about 1-inch thick
8 ounces cherry tomatoes, OR grape tomatoes
2 zucchini
1 red onion
2 tablespoons olive oil
Seasoned salt, such as Lawry’s

BBQ Chicken Street Tacos

1 lb. boneless skinless chicken breasts or thighs
about 2/3 cup BBQ sauce
1 small red onion
Small bunch fresh cilantro
about 1 cup shredded cheese, sharp cheddar, mozzarella or preferred cheese variety
8-12 corn tortillas
Fresh fruit or veggies

Grilled Citrus Salmon Packets

4 salmon fillets, 1/4 lb. each
Dill weed
1 lemon
1 lime
1 orange
Serve with fresh veggies, brown rice or grilled garlic bread

Huevos Rancheros

10 eggs
1/2 cup organic black bean salsa
1 cup shredded cheese
Couple slices bread or tortillas
Serve with fresh fruit

Black Bean Coconut Brownies

3 cups pureed black beans
2 cups sugar
1 tsp vanilla
1/2 cup milk (or rice milk)
1 1/2 cup flour
1/2 cup cocoa
1 Tbsp baking powder
1 tsp baking soda
1 cup shredded coconut (unsweetened) (and optional)
2 cups semi-sweet chocolate chips
