Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

Home, Sweet, Home. After sleeping in my own bed 3 out of the last 11 nights, I’m beyond thrilled to be home. My travel spurt is over and I am craving the routine, the meal planning, the afternoons of cooking, and those brief, but quiet afternoon moments when all my boys are all busy doing something productive (or sometimes, not so productive.)

I’m working on a simple meal plan for our family this week, mostly one that uses up some ingredients from the pantry and freezer…as I’m trying to clear things out before my next big trip to Costco. (Which means I’m working on the next big ’20 Meals For…’ plan!!!)

Here are a few ideas for you to try this week…hope you enjoy!

Scroll down and you’ll see a list of ingredients for each of the recipes included, in the order they are listed above. I’ll include ALL ingredients, including many that you already have in your pantry, refrigerator, or freezer. If you have those ingredients, just don’t click them!

Spicy Mandarin Orange Chicken

1 1/2 cup white or brown rice
2 chicken breasts
1/2 cup flour (use brown rice flour for GF option)
1 tsp garlic powder
1 tsp onion powder
2 tsp orange peel
2 Tbsp olive oil
1/2 cup Frank’s sweet chili sauce
1/4 cup orange juice
1 Tbsp minced onion
1 tsp minced garlic
1 tsp ground ginger
1 can mandarin oranges
Serve with veggies on the side

Stuffed Sweet Potatoes with Mango & Black Bean Salsa

4-6 medium-large sweet potatoes
2 medium mangoes
1 can black beans
1 small green pepper
1/2 red onion
1 Tbsp lime juice
1 tsp ground cumin
1/2 tsp ground cinnamon
Butter, optional

Orange Glazed Pork Chops

4 pork chops
2 cups orange juice
1 tsp cinnamon
1 tsp ginger
4-6 sweet potatoes
butter or margarine
1 tsp cinnamon
2-3  cups frozen veggies, green beans in our case, or other favorite side dish

Sweet Potato Zucchini Frittata

2 medium zucchini (about 1 1/4 lb total)
2 medium sweet potatoes
8 eggs
1/2 cup milk
1 Tbsp minced onion
1 tsp minced garlic

Salsa Verde Chicken Enchiladas

3 cups cooked and shredded chicken
2 cups salsa verde
16 corn tortillas
1 to 1 ½ cup shredded jack cheese
Side dish ideas – rice & refried beans

Banana Breakfast Split

4 bananas
4 spoonfuls of Greek vanilla yogurt, or preferred flavor
Fresh blueberries, strawberries, raspberries and/or blackberries, about 2 cups total
about 1/2 cup granola (try my nut-free and no-added sugar homemade granola recipe)

Orange Dessert Smoothies

2 Sunkist® Valencia Oranges
1 mango
1 banana
1 1/2 cups vanilla ice cream
1/2 cup fresh squeezed orange juice (2 Sunkist® Valencia Oranges worth)
