Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

I’m hungry just looking at this list. We had burrito cups this last week to celebrate my second’s 6th birthday…yum-in-a-cup! It’s a great frugal way to serve a crowd at a party…and everyone will think you’re so clever too! Plus, a huge Happy Mother’s Day blessing to all of my mom readers – be spoiled today!

The Recipes

Burrito Cups

2-3 cups cooked rice
1 15 oz. can black beans (or 2 cups cooked black beans)
about 1/2 cup shredded cheese (omit for dairy free!)
2 avocados, diced
about 1 cup chunky salsa
Cilantro, optional garnish
Other burrito cup mix-ins ideas – taco meat (homemade taco seasoning), taco meat with beans, shredded chicken taco meat, sour cream, other favorite burrito fillings
Tortilla chips, optional

Chicken and Bacon Ranch Wraps

1 package Kraft Fresh Take, Cheddar Jack and Bacon
1 1/4 lb. chicken tenderloins
10 soft taco size tortillas
10 pinchfuls of lettuce
1 tomato or 1/2 cup grape tomatoes
1/4 cup homemade ranch dressing
Fresh fruit, side serving

Spinach and Chicken Layered Enchiladas

2 cups cooked, shredded chicken
8 oz. container sour cream
10 oz. boxes frozen spinach, cooked and well drained
1 Tbsp minced onion
1 tsp minced garlic
1 tsp ground cumin
10 soft taco size flour tortillas
10 oz. cans green chile enchilada sauce
2 cups shredded Mexican blend cheese

Loaded Slow Cooker Potatoes

8-10 small Idaho potatoes
4 slices cooked bacon
2 Tbsp minced onion
1 bunch green onions
About 1 cup shredded cheese
Couple dollops of sour cream
Fresh fruit or veggie as side (or  fruit smoothies!)

Ham and Potatoes with Baked Eggs

1 Tbsp olive oil
1/2 bag (28 oz.) frozen diced Potatoes O’Brien
2 cups ham
3-4 eggs
Dash of Italian seasoning for serving
Side of fresh fruit

Gluten Free, No Bake Energy Bites

1 1/2 cups gluten free rice krispies (or you can use regular quick cooking or GF quick cooking oats too)
2/3 cup peanut butter (any nut butter will do)
1/3 cup honey
1 cup shredded coconut flakes
1/4 teaspoon ground cinnamon
about 3/4-1 cup mini chocolate chips
