The $5 Dinners Weekly Meal Plan with Printable Grocery List

Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

I’m drooling over the recipes on this week’s plan. We’ve got a little of everything…new recipes to try, simple recipe for the slow cooker and a delicious twist on homemade mac n cheese. Bon appetit!

Orange Sesame Chicken with Butter Tossed Asparagus

1 1/2 – 2 lbs. chicken thighs or breasts
juice from one orange ~1/2 cup
2 tablespoons honey
2 teaspoons grated orange peel
2 teaspoons grated ginger root
1 teaspoon sesame oil
2 teaspoons canola oil
1 tablespoon sesame seeds

Southwest Macaroni & Cheese

1 lb. elbow macaroni noodles
8 oz. sour cream
10 oz. Rotel diced tomatoes with green chilies
2 cups cooked black beans, or 15 oz. can black beans
15 oz. can corn
2 cups Mexican blend cheese, or Pepper Jack cheese blend, divided

Slow Cooker Peach Glazed Pork Roast

1.68 lb. pork shoulder roast
About 1/2 tsp minced onion
1/2 cup peach preserves
1 tsp ground ginger
Serve with 1 1/2 cups brown rice, cooked
Serve with frozen green beans or other veggie

Spicy Quinoa with Kidney Beans, Corn and Lime

2 cups vegetable broth, plus 2 cups water
2 cups quinoa
3 garlic cloves, crushed
1 onion, finely chopped
1 15 oz. can corn
1 10 oz. can Rotel diced tomatoes with green chilies
1 15 oz. can red kidney beans
1 tsp ground cumin
Fresh cilantro, chopped
Juice from 1 lime

Mexican Carnitas

1.5 lb pork shoulder or loin, cubed
2 Tbsp oil
1 teaspoon ground cumin
2 garlic cloves
1/4 cup lime juice or juice from 1 lime
8 corn tortillas
Salsa, diced avocado, sour cream dollops to garnish
Serve with fresh veggies like corn on the cob

Cinnamon Walnut Quinoa with Raisins

2 cups white quinoa
1/4 cup sweetener (I used brown sugar)
1 Tbsp ground cinnamon
Couple handfuls of chopped walnuts
Couple handfuls of raisins, or dried cranberries
Optional: Milk, cream or yogurt
Fresh fruit to accompany
