The $5 Dinners Weekly Meal Plan with Printable Grocery List

Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

Time to fire up the grill! We’ve got a great recipe for grilled pork chops this week, along with a freezer friendly marinade for chicken…that would also be perfect on the grill. The meatloaf and pumpkin pie French toast would also be great in the freezer once cooked. I love having sliced cooked meatloaf in the freezer…makes for a quick lunch on a busy day!

Bacon Topped Meatloaf

2 slices bread
2  tablespoons milk
1/2 onion, finely grated
1/2 carrot, finely grated
2 cloves garlic, or 1 tsp minced garlic
1/2 cup roasted red pepper, chopped
1 1/2 pounds extra lean ground beef
1 tsp Italian seasoning
2 eggs
1 tablespoon mayonnaise
1 teaspoon mustard
1/2 cup plus 1 tablespoon barbeque sauce

Citrus Teriyaki Chicken

4- 4 oz boneless, skinless chicken breasts
1/2 c low sodium soy sauce
Zest of 1 orange
1/2 c sugar or honey
1/2 c wine vinegar
1/2 tsp ginger powder
1 tsp minced garlic
dash red pepper flakes
Serve with rice and stir fried veggies

Avocado Egg Breakfast Sandwich

6 eggs
6 English Muffins
6 slices cheese
6 Spoonfuls of Salsa
1 avocado, mashed
Lemon or lime juice
Cilantro, for garnish
Serve with a side of fresh fruit

Grilled Pork Chops with Peaches and Red Onions

4 small pork chops
Garlic powder, sprinkles
Onion powder, sprinkles
3 large peaches, halved and seeded1 medium to large red onion
Side of homemade rolls or store bought rolls/bread loaf

Black Beans with Mango & Cilantro

1 lb. dried black beans
2 mangoes, diced
About 10 cilantro stems with leaves, chopped
1 tsp ground cumin
Optional: 2 cups of chicken or vegetable broth
Serve with brown rice

Pumpkin Pie French Toast

14 slices whole wheat sandwich bread
3 eggs
1/2 cup milk
3/4 cup canned pumpkin
1 tsp homemade pumpkin pie spice
Butter and syrup for serving
Serve with a side of fresh fruit or smoothie
