Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

So it’s officially spring. Is the weather acting like it where you are? I’m still trying to figure out what happened to winter…but I guess I shouldn’t expect much, living in south Texas. We’ve been enjoying some beautiful weather lately, and I’m hoping to get some yummy recipes going out on the grill soon! (Check out these grilling recipes on my Pinterest board.)

Dutch Oven Pulled Beef with Onions

1 Tbsp olive oil
1 ~1.25 lb. beef chuck roast
4 small white onions
2 Tbsp brown sugar
1 Tbsp balsamic vinegar
1 tsp basil leaves
Serve with veggies and rolls

Ginger Peach Glazed Tilapia

6 tilapia fillets, about 1.5 lbs.
1/4 cup peach preserves
2 Tbsp Dijon mustard
1 tsp ground ginger
Serve with veggies like frozen broccoli and brown rice

BLT Sliders with Parmesan Mayo

1 package turkey bacon
1 package Sister Schubert’s dinner rolls
2 small tomatoes
4 lettuce leaves
1/2 cup mayo
1/4 cup Parmesan cheese
1/2 tsp garlic powder
1/2 tsp onion powder
Serve with chips and fresh fruit

Southwest Wild Rice Pilaf

1/4 cup lime juice
2/3 cup brown rice
2/3 cup wild rice
1/2 red onion
1 green pepper
1 jalapeno pepper
1 15 oz. can corn
1 15 oz. can diced tomatoes
1 15 oz. can black beans
1 tsp ground cumin
1 tsp chili powder
Serve with fresh vegetables like steamed broccoli

Ham and Hashbrowns with Baked Eggs

1 Tbsp olive oil
1/2 bag (28 oz.) frozen diced Potatoes O’Brien
2 cups ham
3-4 eggs
Dash of Italian seasoning for serving
Side of fresh fruit

Southwestern Eggs in a Basket

1 egg
1 small flour or corn tortilla
1/4 cup shredded cheddar cheese
