Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

Stovetop Italian Chicken with Potatoes

2 Tbsp olive oil
1 Tbsp balsamic vinegar
8 bone-in chicken thighs
About 2 lbs red potatoes
4 carrots
1 small onion
1 15 oz. can diced tomatoes
2 tsp Italian seasoning
Drizzles of olive oil

Magda’s Hearty Lentil Soup

1 tablespoon olive oil
1 onion, chopped
1 medium red pepper
1 cup frozen corn
2 cloves garlic
1 1/2 cups dry lentils
5 cups chicken stock
8 ounces tomatoes
1/2 teaspoon thyme
1/2 teaspoon cumin

Slow Cooker Spicy Sausage and Peppers

1 lb. sausage links
1-15 oz. can diced tomatoes
1-10 oz. can diced tomatoes with green chilies
2-10 oz. bags frozen pepper and onion blend
Serve with your favorite bread

Pork Chops with Cranberry-Mustard Sauce

4 pork chops, about 1.5 lbs.
Dash of cinnamon on top of each chop
1 12 oz. bag fresh cranberries (or 1 15 oz. can)
1/4 cup spicy mustard
1 cup sugar
Serve with a side of rice and veggies

BBQ Chicken Topped Potatoes

4 to 6 baking potatoes
1 lb. chicken breasts or thighs
About 1 cup BBQ sauce
Butter, salt and pepper for potatoes
Shredded Cheese for topping
Serve with a side of veggies and fruit

Pumpkin Spice Baked Oatmeal

2 eggs
1/2 cup applesauce
1/2 cup oil
3/4 cup canned pumpkin (1/2 of 15 oz. can)
2 1/4 cups milk
1/4 cup maple syrup or syrup
1/2 cup brown sugar
2 1/2 teaspoon homemade pumpkin pie spice
1 Tablespoon baking powder
1/2 cup wheat flour
4 cups quick cooking oats
