Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

Something for everyone on this week’s meal plan! Hope you find something new to try in the kitchen this week…or better yet, try them all! Happy spring…almost!

Scroll down and you’ll see a list of ingredients for each of the recipes included, in the order they are listed above. I’ll include ALL ingredients, including many that you already have in your pantry, refrigerator, or freezer. If you have those ingredients, just don’t click them!

Roasted Garlic Chicken and Red Potatoes

3 chicken breasts, about 1 1/4 lb.
6 medium red potatoes, about 2-3 lbs.
Olive oil, drizzled on top
Balsamic vinegar, drizzled on top
2 tsp minced dried garlic, or couple cloves fresh garlic
Fresh or frozen veggies, or side salad

Spicy 15 Bean Chili

1 bag 15 bean soup, chili flavor
1 small onion
1 jalapeno
1 pound ground beef
1 28 oz. crushed tomatoes
1 tsp garlic powder
1 Tbsp chili powder

Tilapia with Pan Roasted Tomato Pesto Sauce

4 tilapia filets
1 Tbsp olive oil
1 pint cherry or grape tomatoes
2-3 Tbsp store bought or homemade pesto sauce
Side dish – bread, brown rice, or quinoa and veggies

Mexican Carnitas

1.5 lb pork shoulder or loin
2 Tbsp oil
1 teaspoon ground cumin
2 garlic cloves
1/4 cup lime juice or juice from 1 lime
8 corn tortillas
Salsa, diced avocado, sour cream dollops to garnish
Serve with veggies like Corn Cobs

Slow Cooker Chicken Parmesan

2-4 boneless, skinless chicken breast halves
1/2 cup plain bread crumbs
1/2 cup grated Parmesan cheese
1 tsp. Italian seasoning
1 Tbs. olive oil
1 egg, beaten
4-6 slices mozzarella cheese
1 jar (28-ounces) favorite marinara sauce

Spinach Orzo Soup

8 cups liquid (I used 4 cups chicken stock, 4 cups water)
2 cups chopped carrots
1 15 oz. can diced tomatoes1 10 oz. box frozen spinach
2 cups white beans (or 1 15 oz. can white beans)
1 tsp minced garlic
1 Tbsp minced onion
1 tsp Italian seasoning
1 1/4 cup orzo pasta
Parmesan cheese for each serving

Cinnamon Walnut Quinoa

2 cups white quinoa
1/4 cup sweetener (I used brown sugar)
1 Tbsp ground cinnamon
Couple handfuls of chopped walnuts
Couple handfuls of raisins, or dried cranberries
Optional: Milk, cream or yogurt
Fresh fruit to accompany
