I love showing love to my guys with delicious dinner meals…and they seem to love it too! (Best way to a man’s heart is through his stomach…rings true in this family!) Dutch Oven Pulled Beef 1 Tbsp olive oil 1 ~1.25 lb. beef chuck roast 4 small white onions 2 Tbsp brown sugar 1 Tbsp balsamic vinegar 1 tsp basil leaves Serve with veggies and rolls Baked Zucchini Parmesan 2 cups cooked rice 1 egg 1 teaspoon oregano 1 teaspoon basil 1/2 teaspoon thyme 2 teaspoons parsley 2 medium zucchini 2 cups leftover spaghetti sauce 2 – 3 cups croutons 2 cups mozzarella cheese Spicy Chicken Chili 1-1/4 pounds boneless skinless chicken thighs 1-1/2 cups sliced celery 1 can (15 oz each) Whole Black Beans 1 can (14.5 oz each) Fire Roasted Diced Tomatoes with Garlic 1 can (8 oz each) Tomato Sauce 2 tablespoons red hot pepper sauce 1/3 cup crumbled blue cheese Sweet Potato Chili 1 medium red onion 1 green bell pepper 1 red bell pepper 1 medium sweet potato 4 garlic cloves or 1 heaping tablespoon of minced garlic 1 tablespoon chili powder 1 teaspoon ground cumin 1 teaspoon cayenne pepper (I only used 1/4 tsp) 2 teaspoons unsweetened cocoa powder 1/4 teaspoon ground cinnamon 1 28-ounce can diced tomatoes 1 can black beans 1 can kidney beans 1 cup vegetable broth Garnish with sour cream, shredded cheese, chopped fresh cilantro, and/or tortilla chips Ham and Hashbrowns with Baked Eggs 1 Tbsp olive oil 1/2 bag (28 oz.) frozen diced Potatoes O’Brien 2 cups ham 3-4 eggs Dash of Italian seasoning for serving Serve with fresh fruit Raspberry Brownie Dessert Parfaits 4 brownies 1 box instant pudding plus 2 cups milk About 1 1/2 cups raspberries If you are seeing this in an email or in your reader and you’d like to print your grocery list, then click here to access the list feature, which is only available on the website.
