The $5 Dinners Weekly Meal Plan with Printable Grocery List

Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

It seems unreal that Thanksgiving is a little over 2 weeks away…it’s so early this year and that makes me feel “behind” in all my planning! While I have no doubt that our feast will be wonderful, I’m planning on a few simple weeks of cooking in the kitchen as we gear up for the big day. That being said, the next 2 weeks will be very simple plans!

Scroll down and you’ll see a list of ingredients for each of the recipes included, in the order they are listed above. I’ll include ALL ingredients, including many that you already have in your pantry, refrigerator, or freezer. If you have those ingredients, just don’t click them!

Slow Cooker Hawaiian Chicken

6 chicken thighs
6-8 slices canned pineapple, plus 1/2 cup of juice
1/2 tsp cinnamon
1/2 tsp crushed red pepper
1 cup brown rice and 1/2 cup rice blend, or 1 1/2 cup rice
Serve with a side of vegetables

Beef Fajita Skillet Dinner

1 Tbsp olive oil
3/4 lb. beef for stir-fry
1 Tbsp homemade taco seasoning
1 12 oz. frozen pepper and onion blend
1 15 oz. can diced tomatoes with garlic (or without will work too!)
6 corn tortillas
Serve with a side of refreshing fruit

Chuckwagon Chili

1 cup dried red kidney beans
1.5 lb. ground beef
1 onion
1 15 oz. can diced tomatoes
1- 6 oz. can tomato paste
1 Tbsp garlic powder
3 Tbsp chili powder
2 cups uncooked pasta “wheels” (use rice pasta for a GF meal)
Optional: serve with shredded cheese on top

Slow Cooker Black Beans and Rice

1 cup black beans
1 Tbsp olive oil
1 cup brown rice
2 garlic cloves
1 15 oz. can diced tomatoes
1 tsp ground cumin
Serve with a side of vegetables like corn on the cob

Pumpkin Coffee Cake

1 box yellow cake mix
1 15-oz can pumpkin puree
2 large eggs
1 T vanilla
2 tsp pumpkin pie spice
1 tsp baking soda
1/2 cup brown sugar
1/2 cup flour
1/3 cup chopped walnuts
4 Tbsp butter

Brown Sugar Glaze (for Pumpkin Coffee Cake)

1/2 cup brown sugar
1/4 cup granulated sugar
1 tsp vanilla
1/4 cup heavy whipping cream
